- Preheat oven to 375 degrees F. In a very large bowl stir together the 1/2 cup sugar, flour, and cinnamon. Add apples. Stir to combine. Let stand.
- Make No-Roll Pie Crust dough. In a bowl stir together all-purpose flour, sugar, and salt. In a small bowl stir together cooking oil and milk; add all at once to flour mixture. Stir with fork until dough mixture comes together. With floured hands form ball. Divide in three equal balls.
- With your hands firmly press two of the dough portions onto bottom of a 9-inch pie plate and up the sides; continue pressing to form an edge at the rim. Set aside.
- Divide remaining dough portion into 6 equal parts. On waxed paper, pat each dough portion into 3-inch circles; set aside. Transfer apple mixture to pie shell. Top with dough circles. Sprinkle with additional sugar.
- Place a baking sheet on oven rack; place pie plate on baking sheet. Bake pie for 65 minutes or until filling is bubbly in the center. If necessary, cover top of pie with foil the last 10 to 15 minutes of baking to prevent overbrowning. Remove pie from oven; remove foil; place on wire rack to cool completely.

- In 2-quart saucepan, mix apples, brown sugar, 1 tablespoon of the water and the lemon juice.
- Cook over medium heat, stirring occasionally, until bubbly.
- Reduce heat to low; cover and cook 6 to 8 minutes, stirring occasionally, until apples are tender.
- In small bowl, mix flour, granulated sugar and salt.
- Gradually stir into apple mixture, cooking and stirring until mixture thickens.
- Remove from heat; stir in butter and vanilla.
- Cool 15 minutes.
- Meanwhile, heat oven to 375°F
- Let pie crust pouch stand at room temperature for 15 minutes.
- Remove pie crust from pouch; unroll crust on ungreased cookie sheet.

- In small bowl, beat egg and 1 tablespoon water; brush over edge of crust.
- Fold untopped half of crust over apple mixture; firmly press edge to seal.

PLAIN GOOD AND SIMPLE APPLE PIE

When my boys were small we always went to the apple orchard and picked our own apples for this pie, and then made a bunch and gave to nieghbors and friends. - Combine sugar, flour, cinnamon, nutmeg, and salt; mix with sliced apples.
- Line 9 inch pie plate with pastry.
- Fill with apple mixture.
- Cut up butter and dot the pie with the butter.
- NOTE: If your apples are not tart enough, sprinkle them with 1 tablespoon lemon juice.
- To make basket lattice top, cut 18 strips 3/4 inch wide with pastry wheel. Weave lattice on baking sheet generously sprinkled with sugar.

- Heat oven to 200C/180C fan/gas 6. To make the pastry, sift the flour into a large mixing bowl and add the butter or margarine. Using your fingers, mix together until the mixture resembles breadcrumbs.
- Add about 3 tbsp cold water - 1 tbsp at a time - to bind the mixture into a ball. Then wrap it in cling film and leave to chill in the fridge while you prepare the apples, or for 30 mins if you have time.
- While the pastry is chilling, core the apples, then cut into even-sized chunks so they all cook in the same amount of time. Put the apples into the pie dish, drizzle over the honey and add the cinnamon, mixed spice and about 2 tbsp water.
- Roll out the pastry on a floured work surface until it is large enough to cover the pie dish. Using the rolling pin, carefully lift the pastry and lay it over the top of the apple mixture. Carefully trim off the excess pastry (this can be rerolled and cut into shapes to decorate the pie crust if you like) and press the pastry edges onto the dish to create a seal.
- Make a small cut in the pastry so that the air can escape during cooking, then brush with beaten egg to glaze.
- Bake the pie in the oven for 20-30 mins until the pastry is golden and sandy in appearance and the apple filling is bubbling and hot. Serve while still warm with crème fraîche, ice cream or natural yogurt.

- Place one pie crust into a 9"pie dish.
- Wash plums, do not peel.
- Cut plums in half remove pit, then into quarters.
- Arrange plums in the pie crust.
- Mix together the dry ingredients, then sprinkle over the plums.
- Dot with the butter.
- Place top crust over plums, trim crust edges with enough to turn under, then crimp crust edge.
- Cut about 6 1" slits into the top of the pie.

- Line pie pan with bottom crust.
- Peel and slice apples.
- Put 1/2 of the apple slices in prepared pie pan.
