HOW TO BLANCH ALMONDS
Some recipes call for blanched almonds (almonds with their skins removed). This is a quick and easy way to do this, about 5 minutes. Afterward, you can prepare them as you like, whole, halved, or slivered.

Steps:
- How to do it:.
- Place the almonds in a bowl.
- Pour boiling water to barely cover the almonds.
- Let the almonds sit for 1 minute.
- Drain, rinse under cold water, and drain again.
- Pat dry and slip the skins off.
- Advice:.
- Don't let the almonds sit in hot water too long or they will lose their crispness.
- 1 lb of shelled almonds = 3 cups whole or 4 cups slivered.

- Add water.
- Cook for 5 minutes on HIGH power level.
- Use as desired in any recipe that calls for blanched almonds.
BURNT ALMONDS IN THE MICROWAVE
One of my favorites. A friend of mine showed me this and they taste just like the ones you can buy off the vendors at the trade shows. This are really quick with no mess (something I don't mind at all). Great snack for watching those sporting events like the Superbowl.

Steps:
- In a glass or ceramic microwaveable dish mix all ingredients stirring to make sure everything is mix well. Do Not use a plastic dish for this because it gets hot and melts.
- Microwave for 4 minutes at 600 watts.
- Take out and stir.
- Put back in the microwave for another 2 minutes.
- Take out and spread an a sheet of foil to cool off.
