GAYE'S MICROWAVE FUDGE
A quick and easy chocolate or sugar fix. Chopped nuts can be added with the vanilla, if desired.

Steps:
- Grease a 9x9 inch dish.
- In a microwave safe bowl, stir together confectioners' sugar and cocoa. Pour milk over mixture and place butter in bowl. Do not mix. Microwave until butter is melted, 2 minutes. Stir in vanilla and stir vigorously until smooth. Pour into prepared dish.
- Chill in freezer 10 minutes before cutting into squares.

CANDY BAR FUDGE

- In a microwave-safe bowl, combine the butter, cocoa, brown sugar and milk. Microwave on high until mixture boils, about 2 minutes. Stir in confectioners' sugar and vanilla. Pour into a greased 8-in. square dish. , In another microwave-safe bowl, heat caramels and water on high until melted, about 75 seconds. Stir in peanuts; spread over chocolate layer. Microwave chocolate chips on high until melted, about 30 seconds; spread over caramel layer. Chill until firm.

This fudge was included in my Christmas treats that I took to the teachers at school. It was the first to be gone, and I had lots of requests for the recipe!

- Grease an 8x8 inch square baking pan.
- In a microwave-safe bowl, combine butter, cocoa powder, brown sugar and milk. Microwave until mixture boils. Stir in confectioners' sugar and vanilla extract. Pour into prepared pan.
- In a microwave-safe bowl, microwave caramels and water until caramels melt. Stir in peanuts. Spread mixture over chocolate layer.
- In a small microwave-safe bowl, combine semisweet and milk chocolate chips; microwave until melted. Spread over caramel layer. Chill for 2 hours, or until firm.

- Melt butter on high for 1-2 minutes or until melted. Stir in cocoa, brown sugar and milk. Cook on high for 2-3 1/2 min or until the mixture comes to a boil, stirring once. Stir again. Cook on high 1 more minute. Stir in powdered sugar and vanilla. Spread in a 9x9 inch pan that has been lined with foil. Melt caramels and water on medium for 4-5 minutes. Stir in nuts. Spread over fudge. Melt chocolate chips on medium for 2 1/2-3 minutes.Spread atop caramel. Chill till firm.
