MINI CINNAMON ROLLS

A quick and easy cinnamon roll recipe that doesn't involve making the dough.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  • Unroll crescent roll dough onto a silicone baking mat or lightly greased work surface and separate into 4 rectangles; firmly press diagonal perforations with your fingers to smooth them out.
  • Mix brown sugar and cinnamon together in a small bowl; sprinkle mixture evenly over rectangles.
  • Roll each rectangle into a log starting from the longer side; cut each log into 1/2-inch thick slices. Arrange mini cinnamon rolls close to one another on the baking sheet.
  • Bake the mini cinnamon rolls in the preheated oven until golden, 10 to 13 minutes. Transfer baked rolls to a plate and set aside to cool for 1 minute.
  • Combine the confectioners' sugar, milk, and vanilla extract together in a small bowl to make a smooth icing. Pour icing over warm rolls.

Steps:

  • Heat oven to 350°F. Spray 16 mini muffin cups with cooking spray. In small bowl, mix brown sugar and pumpkin pie spice.
  • Unroll dough sheet on lightly floured surface. Spread with 1/4 cup butter; sprinkle with brown sugar mixture, pressing lightly. Starting with long side, roll dough up tightly. Cut into 16 (3/4-inch) slices. Place slices, cut sides down, in muffin cups.
  • Bake 13 to 15 minutes or until golden brown. Immediately remove buns from pans; insert lollipop stick into side of each bun. Cool on cooling racks 30 minutes.
  • In medium bowl, beat cream cheese and 1 tablespoon butter with electric mixer on medium speed until smooth. Gradually beat in powdered sugar and vanilla. Slowly beat in milk, 1 teaspoon at a time, until glaze is thin enough to drizzle. Spoon glaze into small resealable food-storage plastic bag; seal bag. Cut off tiny corner of bag; squeeze bag to drizzle glaze over buns. Store covered in refrigerator.

MINI CINNAMON BUNS (BREAD MACHINE DOUGH)

So yummy and delicious--try it and you'll see! Uses dough from bread machine recipes (upside-down pecan buns) and a delicious (healthy--er.. a bit) raisin, cinnamon, and sugar filling--and a yummy icing!

Mini Cinnamon Buns (Bread Machine Dough) image

Steps:

  • For dough, add all ingredients in a bread machine pan in the order listed.
  • Select the Dough/Pasta setting. Press Start.
  • When beeps to "Add ingredients", don't do anything. Let it go all the way.
  • When dough is finish, remove from machine.
  • Knead dough for about 10 minutes using flour if sticky.
  • Roll out into a rectangle (about 14 by 16 inches). Cut dough into 4 rectangles.
  • For each smaller rectangle, spoon 1/4 of the mixture on the dough.
  • Roll into a long pinwheel. Pinch the end the dough to keep in place.
  • Cut into 1/2 inch pieces; makes about 18.
  • Do the same thing for the other 3 pieces of dough and the rest of the filling.
  • Place onto a greased baking pan. Cover.
  • Let rise for 30-40 minutes.
  • Preheat oven to 350°F.
  • Bake for 12-15 minutes, or until lightly brown on top.
  • Remove from oven and let cool completely.
  • Mix together sugar, vanilla, and milk.
  • Drip icing on top of buns.
  • Enjoy!

  • In a small microwave safe bowl (or glass measuring cup), combine the sugar, butter, water and milk. Heat in the microwave until the mixture is hot and the butter is almost melted (it took about 1 minute on HIGH in my microwave). Let the mixture come down to 120 degrees. Gradually add the milk mixture into the flour mixture. Add the egg and mix until a soft and sticky dough forms.
  • If using a stand mixer, switch to the dough hook and set on the lowest mixing setting for 4 minutes or until the dough becomes elastic or knead by hand on a lightly floured surface for 3-4 minutes. Cover the dough with plastic wrap and allow it to rest on the counter for 10 minutes.
