  • Set your churning bowl in the freezer the night before to chill. Soak your cashews the night before as well, or for at least 4-6 hours before blending.
  • OPTIONAL STEP: When ready to prepare ice cream, steep HALF of your fresh mint leaves in the coconut milk. Bring the coconut milk to a simmer in a small saucepan and add the mint leaves, then turn to low. Use a wooden spoon or muddler to puncture the mint so it infuses the coconut milk. Keep on low for 15 minutes, then kill heat and let cool. Once cooled, strain out the mint leaves using a fine mesh strainer and pour the coconut milk right into a blender. (If not doing this step, just add all of the fresh mint and coconut milk right into the blender. The flavor won't be AS strong, but it will still be delicious.)
  • Add remaining ingredients, including DRAINED cashews and remaining fresh mint (vanilla extract is optional) and blend until creamy and smooth - about 3-4 minutes, using the "liquify option" if you have it. Taste and adjust sweetness/minty-ness as needed.
  • Add mixture to your chilled ice cream maker bowl and churn according to manufacturer’s instructions until thoroughly chilled, about 45 minutes. It should resemble thick soft serve (see photo).

  • Add all ingredients in the order listed above (except for the chocolate chips) to a high-speed blender. So, the zucchini will go in first and the cashews will go in last. Be sure to only use the solid white coconut cream from the canned coconut milk. See notes below.
  • Blend starting on the lowest speed and slowly increase to the highest speed. Stay on the highest speed for 60 seconds until smooth and creamy. If your blender is having trouble blending use the tamper/plunger to safely push the contents into the blades while it is blending. If you do not have a tamper or plunger then you will have to stop and scrape down the sides throughout the blending process to ensure all ingredients get incorporated properly.
  • Pour the ice cream into an 8 x 4 loaf pan or freezer-friendly container. Pour in the chocolate chips and gently fold them into the ice cream. Top it off with 2-3 tablespoons more of chocolate chips if desired. Cover and freeze for 8 hours or overnight.
  • Before scooping and serving, remove the loaf pan from the freezer and let it sit at room temperature for 15-20 minutes. You can also place the bottom of the loaf pan in warm water to speed up the process. Scoop and serve like you would regular ice cream. Garnish with fresh mint if desired.

  • Measure out 1/2 cup of coconut milk and set aside. Add remaining coconut milk, sugar, and salt to a small saucepan. Place over medium heat and whisk until sugar is dissolved. Add the peppermint extract.If you are adding spinach, ladle 1/2 cup of warm ice cream base into a blender along with a handful of fresh spinach. Blend until completely smooth. Transfer the puréed spinach back into the saucepot to finish cooking.
  • Stir in the cornstarch to the reserved 1/2 cup coconut milk until well combined. Add cornstarch/coconut milk mixture to the saucepan and bring to a boil, stirring frequently. Boil for 5 minutes, stirring frequently, until the cornstarch is completely cooked and ice cream base has thickened. Transfer to a shallow container, cover, and refrigerate for at least 4 hours.
  • Add chilled ice cream base to frozen ice cream bowl and churn according to manufacturer's instructions. Churn until it becomes thick and resembles soft serve. Once it is thick, add chocolate chips and churn for 30 more seconds until they are well combined. You can serve now or transfer to a pint-size container and store in the freezer until ready to serve. Allow 5-10 minutes to thaw when removing from the freezer.
