BEEF NACHO CASSEROLE
A simple meal to whip up in less than an hour that even the kids are sure to love. Layers of seasoned ground beef, corn, tortilla chips and cheese are baked under a layer of Colby cheese. Monterey Jack is also good in place of the Colby cheese.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- Place ground beef in a large skillet over medium-high heat. Cook, stirring to crumble, until evenly browned. Drain grease. Remove from the heat, and stir the salsa, corn, mayonnaise and chili powder into the beef. In a 2 quart casserole dish, layer the ground beef mixture, tortilla chips and cheese twice, ending with cheese on top.
- Bake for 20 minutes uncovered in the preheated oven, until cheese is melted and dish is thoroughly heated.

Steps:
- Preheat oven to 350°F. Spray 13x9 baking pan. Layer the chicken and broccoli.
- Mix the Miracle Whip and soup together in a small bowl. Pour over chicken and broccoli and using a knife cut through layers.
- Combine crumbs with margarine until well coated. Cover the casserole with crumb mixture.
- Cover with foil.
- Bake 45 minutes. Uncover and bake additional 15 minutes or until browned and bubbly.

EASY MIRACLE WHIP CHICKEN BAKE
Steps:
- Heat oven to 350°F.
- Combine rice, boiling water, 1 cup cheese and 1/4 cup dressing in 8-inch square baking dish sprayed with cooking spray. Let stand until ready to use.
- Cook and stir bacon in large skillet on medium heat until crisp. Remove bacon from skillet with slotted spoon; drain on paper towels. Discard all but 1 Tbsp. drippings from skillet.
- Add chicken to reserved drippings; cook 3 min. on each side or until evenly browned on both sides. Place over rice mixture.
- Bake 25 to 30 min. or until chicken is done (165°F). Meanwhile, combine remaining cheese and dressing.
- Top chicken with bacon, tomatoes and cheese mixture; bake 5 min. or until cheese is melted. Sprinkle with onions.

This recipe is from my mom, who got it from my aunt. My aunt and I have unlimited access to pork because our husbands are both hog farmers and this is a great way to use up leftover ham. It's also a relatively quick meal to prepare.

- Mix hashbrowns, ham, cheese and onion.
- In a separate bowl, combine Miracle Whip, milk, and pepper. Add to hashbrown mixture and mix lightly.

- Preheat oven to 350*F
- Place broccoli in a steaming basket on stove and steam for 5 minutes or until broccoli is tender to a fork.
- Remove broccoli from stove and chop into bite sized pieces. Place into a medium size mixing bowl.
- Add to broccoli, soup, mayonnaise, butter, eggs, onion, salt and pepper. Mix well.
- Add 3/4 cup of cheese to broccoli mixture and mix well.
- Pour entire contents into an 8x8" square baking dish.
