ALL PURPOSE HOUSE SEASONING

This is my very own all purpose seasoning blend that I use on a daily basis. Will store on the counter up to 2 months. Will keep in the freezer for up to 12 months. Use anyplace you would use regular salt and pepper. Feel free to experiment with your favorite dried herbs and spices. I also keep smaller batches (just split a recipe) on the counter with 1 strip of dried lemon and another with 1 strip of dried lime in it. Simply peel a strip of the zest and leave it on the counter overnight to dehydrate it. I have yet another with dried mint in it.

All Purpose House Seasoning image

Steps:

  • Crush dehydrated onion and garlic well.
  • Combine all ingredients and pour into a glass jar with a tight fitting lid.

1 cup kosher salt, do not substitute table salt
2 tablespoons cracked black pepper, substitute with ground pepper reduce to 1 TBSP
1 tablespoon instant minced onion, crushed
1 teaspoon celery seed
1 1/2 teaspoons instant minced garlic, crushed
1 1/2 teaspoons Old Bay Seasoning

Cheesy Creole Breakfast Skillet image

Steps:

  • For the Creole sauce: Whisk together the mayonnaise, mustard, Cajun seasoning, paprika, pickle, hot sauce, Worcestershire sauce, garlic and chives in a small bowl until combined. Cover and refrigerate until the skillet is done.
  • For the skillet: Preheat the broiler. Toss the shrimp with the House Seasoning in a small bowl and set aside.
  • Melt the butter in a large (12-inch) cast-iron skillet over medium heat. Add the onions and green and red peppers and cook, stirring occasionally, until the onions begin to turn translucent, about 5 minutes. Add the shrimp, andouille and garlic and cook, stirring constantly, until the shrimp are opaque and the sausage is heated through, about 2 minutes.
  • Add the eggs and milk and slowly scramble the mixture with a silicone spatula, scraping up large curds from the bottom of the pan. As soon as the eggs are almost set, but still a tiny bit runny (about 2 minutes), remove from the heat and sprinkle with the Cheddar.
  • Broil until the cheese melts, 10 to 15 seconds. Remove the skillet from the oven, drizzle with some Creole sauce, and sprinkle with the green onions.
  • Stir together the garlic powder, onion powder, paprika, salt and pepper in a small bowl.

1/2 medium red bell pepper, seeded and chopped
6 ounces andouille sausage, sliced 1/4-inch thick
1 clove garlic, minced
6 large eggs, beaten
1/4 cup whole milk
1/2 cup shredded white Cheddar
2 tablespoons thinly sliced green onions
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon sweet paprika
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper

KARDEA'S REUBENS

Just like a Rueben you'd find at a restaurant, my recipe has my own version of Thousand Island or Russian dressing, rye bread, Swiss cheese and sauerkraut. What I do differently is saute some onion with the sauerkraut. I love the extra sweetness and crunch it adds to the sandwiches, and I know you will too.

Kardea's Reubens image

Steps:

  • For the Sea Island dressing: Combine the mayonnaise, ketchup, relish, sriracha, House Seasoning and Worcestershire sauce in a small bowl. Set aside.
  • For the Reubens: Melt 1 tablespoon butter with the oil in a large skillet over medium-high heat. Add the onion and sprinkle with a little salt. Cook until the onion begins to soften, about 5 minutes. Stir in the sauerkraut and cook until the mixture begins to brown, about 5 more minutes. Remove the onion and sauerkraut from the skillet to a medium bowl, and set aside. Wipe out the skillet, if necessary, for cooking the sandwiches.
  • Spread some Sea Island dressing on each of 6 slices of bread, then top each with 1 slice of the cheese, some corned beef, fried sauerkraut and onions and another slice of cheese. Top each with the remaining slices of bread.
  • Melt 3 tablespoons butter in the same skillet. Add three sandwiches. Cook until each side is golden and crispy, 3 to 4 minutes per side. Repeat with the remaining butter and sandwiches.
  • Stir together the garlic and onion powders, paprika, salt and pepper in a small bowl. Store in an airtight container.

FRIED GREEN TOMATOES WITH SPICY RANCH DRESSING

Fried Green Tomatoes with Spicy Ranch Dressing image

Steps:

  • Stir together the flour and 1 teaspoon of the House Seasoning in a shallow pie plate or baking dish. In a separate baking dish, whisk together the eggs and buttermilk. In a third baking dish, stir together the panko and remaining 2 teaspoons House Seasoning.
  • Pour enough oil to come 1 inch up the sides of a large cast-iron skillet and heat to 375 degrees F over medium-high heat.
  • Working with one tomato slice at a time, dredge the in the flour mixture, shaking to remove any excess. Dip in the egg wash, letting any excess drip off. Coat in the panko mixture and then place on a plate. Repeat with the remaining tomato slices. Working in batches, fry the tomatoes until golden brown, about 3 minutes per side. Drain on a wire rack set in a sheet tray and sprinkle with salt while still hot. Serve warm with Spicy Ranch Dressing.
  • Stir together the ranch dressing, sriracha, sour cream and paprika in a small bowl. Season with salt and pepper.
  • Stir together the garlic powder, onion powder, paprika, salt and pepper in a small bowl.

PAN-SEARED OKRA WITH BACON

Okra is a staple in Gullah cooking, and let me tell you, give me a cast-iron skillet and I'm a happy girl. It's the perfect pan for giving that okra its crispy, roasted exterior. Paired with bacon...shoot, it's downright delicious. My secret for un-slimy okra? A squeeze of lemon juice.

Pan-Seared Okra with Bacon image

Steps:

  • Cook the bacon in a large cast-iron skillet until crisp, about 8 minutes. Remove to paper towels to drain, reserving the drippings in the skillet.
  • Add the okra to the drippings in the skillet. Add the canola oil if the skillet is dry. Sprinkle with the House Seasoning, and toss to coat. Saute until crispy and golden brown, 12 to 15 minutes.
  • Squeeze the juice from the lemon over the top of the okra. Crumble the bacon over the top and sprinkle with freshly ground pepper. Serve right from the skillet.
  • Stir together the garlic and onion powders, paprika, salt and pepper in a small bowl. Store in an airtight container at room temperature.

THE BEST AMISH MEATLOAF RECIPE

After traveling in eastern Ohio and eating many different "Amish-style" meatloaves, I finally asked for this wonderful meatloaf recipe. This one is not as sweet as the typical Amish recipe and has some garlic flavoring in it. We love it!!

  • Mix first 7 ingredients throughly together and pack into a loaf pan.
  • Next put the strips of bacon on top and bake for an hour at 350F degrees.
  • While waiting, mix the sauce ingredients together.
  • After the hour is up, pour and smooth the sauce onto the meatloaf and cook another 15 to 20 minutes. I have sometimes added 1/2 teaspoon of garlic salt instead of the salt to the sauce mixture and that is also delicious!
