SWEET AND SOUR CHICKEN CURRY
This is going to be a new dish for some of you, The chicken is cooked in a spice and mango chutney sauce. The dish is Balti in origin and should be cooked in a wok. Stun your friends with this one.

Steps:
- In a large bowl mix together the tomato puree with the yogurt, garam masala, chilli powder, garlic, mango chutney, salt and sugar.
- Heat the oil in a wok, pour in the spice mix, stir, reduce the heat and cook for 2 minutes.
- Add the chicken, stir to coat all of the pieces and add the water.
- Cook for 6 mins till the meat is tender.
- Add half of the chillies and cream, cook 2 minutes.
- Serve garnished with the remaining chillies and the chopped coriander leaves.

- In a small saucepan, melt butter. Stir in the brown sugar, curry powder and salt. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. In a lightly greased 2-qt. baking dish, combine the fruit; mix well. Pour sauce over the mixed fruit. Bake, uncovered, at 300° for 30 minutes or until heated through.

- Heat the oil in a large frying pan. Add the chicken and brown well on all sides, then transfer to a plate. Add the onions and peppers to the pan, and cook for 5 mins until the veg starts to soften. Return the chicken to the pan and sprinkle in the curry powder, then add the pineapple with its juice, and the coconut milk. Season and simmer, uncovered, for 40 mins until the chicken is tender and the sauce has reduced and thickened a little.
- Add the beans and pepper sauce to the pan. Simmer for another 2-3 mins until the beans are warmed through, then scatter with coriander and serve with cooked rice.

Originally this was a recipe was from Feb 2007 Gourmet,but I DRASTICALLY changed it to a sweet+sour curry. I used tiny shells(cooled) to mix with the curry,+IT TURNED TASTING GREAT!

Steps:
- Cook shells.
- In a separate large pot, combine mincemeat, vinegar, ginger, garlic, tomato paste, curries, lime juice, raisins and briskly simmer.
- Add chicken, all vegetables, and simmer 20 minutes; taste and correct seasonings.
- When done, let cool and then mix in cooked COOLED pasta WITH IT.

- Pre-heat your oven to 180C and prepare you tofu into bitesize pieces. Place the tofu on a baking tray with a little coconut oil, then bake in the oven for 15 minutes.
- Next, prepare your onion, garlic and fresh ginger. Then, heat two teaspoons of coconut oil in a pan over medium heat. Add the cumin seeds and fenugreek seeds to the pan and cook until browned (a couple of minutes). Then add the onion, garlic, fresh ginger and dash of water. Cook until the water has reduced, and ingredients have softened (a further few mins).
- Next, add the garam masala, chopped tomatoes, tomato puree, turmeric, and chilli powder. Combine well. Swish the empty tin/carton of tomatoes with a large dash of water and add this to the pan too. Then stir in the sweetened coconut/soy yoghurt.
- At this point, the tofu will be done. Add the tofu and frozen peas to the pan along with the salt and light brown sugar. Combine well and allow to simmer for 8 minutes.

- Heat the oil in a saucepan. Oil should be moderately hot. Test the heat by adding one cumin seed to the oil. If the cumin seed cracks right away, the oil is ready.
- Add the cumin seeds, asafetida, fenugreek seeds, fennel seeds powder, coriander powder, turmeric, and red chili powder stir for few seconds. Add ginger and guava mix it well add 1 cup of water and cover the pan.
- Lower the heat and cover the pan cook for about 5-8 minutes until guavas are tender. Add mango powder, lemon juice and sugar stir and add cilantro. Turn off the heat and cover the pan for few minutes.
