DAISY'S MOJO RIBS
Steps:
- In skillet over medium-high heat, add about 2 tablespoons olive oil. Once heated, add the garlic and onion, cook until pale golden brown; 2 to 3 minutes only, stirring constantly.
- Stir in the citrus juices, 2/3 cup water, 2 tablespoons of olive oil and all dry ingredients. Bring sauce mixture to a rolling boil. Remove from heat and let cool to room temperature.
- Preheat oven to 325 degrees F.
- Season the ribs with salt and pepper. Add enough oil to a hot large skillet to just cover. Add ribs and sear, about 3 minutes each side. Remove to a large shallow roasting pan.
- Add Mojo sauce over the country style ribs and turn to cover. Seal tightly with foil and roast for 3 hours. Marinate each hour with Mojo sauce. Take foil off for the last 30 minutes of cooking, or until tender.
MOJO SAUCE

- Slice the oranges down the middle and squeeze the juice. Mash a head of garlic in a morteros (a thick bowl with a mashing paddle used in Latino cooking). Add a little salt to the garlic (more than a pinch, less than a teaspoon). Add the sour orange juice to the mixture. Add oregano and pepper, to taste. Brush the Mojo Sauce on the food as it is cooking.

- In a large Dutch oven or straight-sided 12-inch saute pan, heat the olive oil over medium heat. Add the shallots and garlic and cook until softened, about 2 minutes. Add the white wine and bring to a boil. Season with salt and pepper. Add the mussels, cover and steam until open, about 3 minutes. Using a slotted spoon, transfer the mussels to a large serving bowl.
- Add the creme fraiche, parsley, butter, chives and mustard to the remaining cooking liquid and bring just to a boil while stirring to combine. Pour the sauce over the mussels. Serve with French fries.

- MOJO: whisk together all of the Mojo ingredients (except the steaks). Reserve 1/4 cup of marinade, covered, in the fridge. Marinate the steak in the remaining Mojo for 1 hour prior to grilling.
- MACARONI: Heat butter in a large skillet and sauté the onions, garlic, and habanero until just tender. Add the cooked macaroni, cheese, and poblano puree. Mix thoroughly and season to taste. Keep warm.
- GRILL: Grill the steak to desired doneness. Trim the roots off the green onions and grill them alongside the steak.
- SERVE: Place macaroni onto a plate. Place the steak atop the macaroni and spoon reserved Mojo over the steaks. Place grilled green onion stalks over top.

CUBAN MOJO WINGS

- Heat 2 inches of oil in a large, heavy-bottomed pot over medium heat until a deep-fry thermometer registers 375 degrees F.
- Whisk together the flour and 3/4 teaspoon salt in a large bowl. Dredge the wings in the flour mixture and fry until browned and crispy, 10 to 12 minutes.
- Meanwhile, add the cumin, garlic powder, onion powder, oregano, orange zest, lime zest, and 2 teaspoons salt in another large bowl. Mix well.
- Transfer 2 teaspoons of the mojo seasoning to a small bowl and add the sour cream, orange juice and lime juice. Mix to combine.
- Add the melted butter to the remaining mojo seasoning and whisk to combine. Toss the fried wings in the mojo butter. Serve with the sour cream dipping sauce.
MOJO-LICIOUS CHICKEN
This tasty recipe is usually grilled, but can also be baked if you'd like. We use chicken thighs, but any cut of chicken is OK. Preparation time does not include marinating time.

- Saute garlic and chile pepper in olive oil and cool. Add remaining seasonings.
- Place chicken in plastic ziplock bag and pour in all but 1/3 C marinade. Refrigerate remaining marinade. Seal bag and refrigerate 2 to 4 hours, turnuing occasionally.
- Coat grill rack with nonstick cooking spray. Preheat grill to medium heat and prepare for indirect cooking. Drain chicken, discard marinade.
- Grill covered (turning occasionally) for 30-40 minutes until until juices run clear when tested and is no longer pink. (180 dg.) Brush remaining marinade on all sides of chicken during last minutes of grilling.
