Beer Can Chicken with Beer and Molasses Bbq Sauce image

Steps:

  • Rinse chicken thoroughly. Season inside and outside with salt, pepper, and garlic. Using can opener, open beer can. Place chicken upright on can, so can is inside chicken cavity. Place on a roasting pan and roast in a preheated 350 oven for 50 to 60 minutes or internal temperature of 150 degrees F. Glaze with BBQ sauce and finish cooking on grill.
  • Combine all ingredients in sauce pot and simmer until reduced by 1/3 of the original volume. Cool completely and pack for transport.

1 to 2 pounds roaster chicken

1 1/4 quarts chili sauce
1 1/2 pints molasses
1 1/2 pints light beer
8 tablespoons Dijon mustard

2 1/2 tablespoons soy sauce
2 1/2 tablespoons crystal hot Louisiana sauce
5 tablespoons lemon juice
1 1/3 tablespoons liquid smoke

  • For barbecue sauce:
  • Heat oil in a medium saucepan over medium heat. Add tomato paste and cook, stirring often, until paste turns brick-red, about 2 minutes. Add garlic powder, onion powder, paprika, cayenne, and black pepper. Cook, stirring, until fragrant, about 1 minute. Add vinegar, orange juice, brown sugar, molasses, Worcestershire sauce, mustard powder, and 3 cups water. Cook, stirring occasionally and scraping up any browned bits, until reduced by half, 50-60 minutes; season with salt.
  • For chicken:
  • Prepare grill for medium heat. Season chicken with 4-3-2-1 Spice Rub. Grill, turning occasionally, until lightly charred, 15-20 minutes. Continue grilling, turning and basting with barbecue sauce often, until chicken is cooked through and an instant-read thermometer inserted into the thickest part of thigh registers 165°F, 8-10 minutes longer.
  • DO AHEAD: Barbecue sauce can be chilled 1 week ahead.

  • In a saucepan bring vegetables juice, chili sauce, molasses, horseradish, vinegar, mustard and garlic to a boil.
  • Reduce heat; simmer 10 minutes, stirring often.
  • Let barbecue cool.
  • Place barbecue sauce and chicken in a ziplock bags and let marinade; not more than 8 hours.
  • Spray grill with nonstick cooking spray and preheat.
  • Place chicken on grill and cook for 20 to 25 minutes, turning once and basting often with sauce.
  • If you don't want to marinade chicken, just brush on as you cook.
