SHRIMP MOLD
A great shrimp appetizer! Serve with crackers or toasted French bread.

Steps:
- Heat soup in a small saucepan or in a microwave oven.
- In a medium bowl, stir gelatin into cold water. Mix hot tomato soup into the gelatin liquid.
- In a medium size mixing bowl, combine cream cheese and mayonnaise together. Mix soup mixture into the mayonnaise and cream cheese mixture. Mix well. Add shrimp, celery, and green onions.
- Spoon the mixture into a 1 quart mold and refrigerate for at least 1 hour, but preferably overnight. Unmold onto a serving plate before serving.

NO-BRAINER SHRIMP SPREAD
A variation of the ultimate lazy appetizer recipe from the 80's, when you threw shrimp over a block of cream cheese, poured cocktail sauce over it, and served with crackers. I do it this way for a bigger group and also because it's easier to spread on crackers. Note: Many times I use 3 cans (or 1/4 lb. fresh) shrimp, so I can satisfy greedy shrimp lovers who are there. (Note: You may not need to use the whole bottle of cocktail sauce -- use your judgement adding enough to cream cheese to make it spreading consistency and adding a layer of sauce on top of the mixture.)

Steps:
- Mix together softened cream cheese, 2/3 of shrimp, sliced onions and 1/2 bottle of shrimp cocktail sauce.
- Mix well, adding more cocktail sauce if necessary to make mixture a spreading consistency.
- Put in a serving bowl, put a thin layer of cocktail sauce over spread to cover top, then arrange remaining shrimp over that to decorate the appetizer.
- Chill, then serve with crackers of your choice.
CREAMY SHRIMP SPREAD
A former co-worker shared this recipe with me. It's easy to make but so delicious-people keep coming back for more! The spread is also good served on crackers or fresh vegetables, and it can be served for any type of party, casual or fancy.

- Heat soup and stir in gelatin until dissolved.
- Add cream cheese and beat until smooth.
- Add remaining ingredients and mix well.
- Pour into oiled molds, I usually use small margarine tubs.
- Chill.
- Unmold and serve with crackers.

- 1. Dissolve gelatin in the warm water. Set aside for a few minutes while you mix other ingredients.
- 2. Mix tomato soup and cream cheese with electric mixer. Add onion and celery and shrimp. Now mix in gelatin & water mixture that has now become thickened. Last, add in the mayonnaise. Refrig. over night. Serve with crackers. I use Ritz ! Enjoy !
- 3. If you are going to put this dip into a mold ( I used to use a mold in the shape of a fish ) then spray the inside of your mold with non-stick cooking spray and pour your dip into it and then refrig. overnight. I would dip the bottom of my mold into a sink filled with two inches of hot water and then unmold my dip. I'd place lettuce around the place before I unmolded the dip to decorate it up a little. With a couple of slices of lemon as added decoration.

- Mix cream cheese, sour cream and mayonnaise together. Spread the mixture onto the bottom of a 12-inch round pizza pan. Sprinkle the shrimp on top of the cream cheese mixture, and then evenly pour the seafood cocktail sauce over the shrimp. Sprinkle cheese, chopped pepper, green onions and tomatoes to finish. - In a saucepan, heat soup and cream cheese over medium heat until cheese is melted, stirring frequently. Remove from the heat; set aside to cool., In a small microwave-safe bowl, sprinkle gelatin over water; let stand for 1 minute. Microwave on high for 40 seconds; stir. Let stand for 2 minutes or until gelatin is completely dissolved. Stir the gelatin mixture, celery, mayonnaise, lemon juice and onions into soup mixture. Fold in shrimp., Pour into a 5-cup ring mold coated with cooking spray. Cover and refrigerate for 8 hours or until set. , Invert onto a serving plate. Fill center with lettuce and shrimp if desired. Serve with crackers.
