I grew up in a family of good cooks, my grandmother was the best! I had to watch because nothing was written down! My pasta dishes honor my Grandmother Marchesani. This one is easy and oh so good!

Steps:

  • 1. To make the pasta: Combine the 3 three eggs, flour and water in a blender, mix until smooth. Let sit for 10 - 15 minutes. It will be thick but pourable!
  • 2. While the pasta "batter" rests. Mix the filling ingredients, making sure to mix well. Hint: the pinch of nutmeg will make cheese flavor really stand out.
  • 3. Making the "shells" OVER MEDIUM HEAT, IN A SMALL NON-STICK FRY PAN, (6") ADD ABOUT 3 TBSP. OF BATTER, YOU WANT TO HAVE A THIN LAYER TO COVER PAN BOTTOM. (ROTATE PAN AFTER ADDING BATTER.) IT'S LIKE MAKING THIN CREPES. A FEW SECONDS ON EACH SIDE AND TURN OUT TO RACK TO COOL. CONTINUE UNTIL ALL BATTER IS USED. COOL ON WIRE RACK. PLACE PASTA CIRCLE ON FLAT SURFACE, AND FILL WITH CHEESE ABOUT 1/4 CUP PER MANICOTTI.
  • 4. IN A 8 ''X 12'' BAKING DISH, POUR ABOUT 1 TO 1 1/4 CUP SAUCE, PLACE STUFFED MANICOTTI SIDE BY SIDE. TOP WITH ADDITIONAL SAUCE, SPRINKLE WITH GRATED CHEESE AND BAKE AT 350 DEGREES , UNCOVERED, FOR 1/2 HOUR OR UNTIL SAUCE IS BUBBLING. MANICOTTI FREEZE WELL (WITHOUT SAUCE, JUST FREEZE ON COOKIE SHEET THEN PLACE IN FREEZER BAG.

Steps:

  • Place flour in a bowl; whisk in milk, eggs and salt until smooth. Heat a lightly greased 8-in. skillet; pour about 2 tablespoons batter into center of skillet. Spread into a 5-in. circle. Cook over medium heat until set; do not brown or turn. Repeat with remaining batter, making 18 crepes. Stack crepes with waxed paper in between; set aside. , For filling, combine cheeses, egg and parsley. Spoon 3-4 tablespoons down the center of each crepe; roll up. Pour half of the spaghetti sauce into an ungreased 13x9-in. baking dish. Place crepes, seam side down, over sauce; pour remaining sauce over top. , Cover and bake at 350° for 20 minutes. Uncover and bake 20 minutes longer or until heated through. Sprinkle with Romano cheese if desired.

Steps:

  • Preheat oven to 350 degrees F.
  • In a medium bowl combine the ricotta, 1 cup of the grated cheese, eggs, and pepper.
  • Fill each crepe with approximately 1/4 cup of the cheese mixture centering it in a straight line down the middle. Top with the shredded mozzarella. Take one end of the crepe and fold over the cheese filling. Then take the other end and pulling slightly, fold over in a wrapping motion overlapping the stuffed portion of the crepe. Repeat until all 12 crepes are filled.
  • Spread one cup of the sauce in the bottom of a large baking pan that has been sprayed with a non-stick cooking spray. Place the filled manicotti in the pan, seam down, side-by-side. Do not overlap, and do not layer them. Spoon the remaining sauce over the manicotti. Be sure to cover all the pasta. Sprinkle with the remaining grated cheese. Cover with foil and bake at 350 degrees F for approximately 30 minutes or until the sauce is hot and bubbling.
  • Remove from the oven and let stand for approximately 10 to 15 minutes before serving. This will give the manicotti time to settle which will make for easy serving. The manicotti will fall apart if served immediately.
  • In a pan heat the olive oil. Add onions and cook until translucent. Add garlic and cook for a few minutes on medium heat. Do not let garlic burn. Add tomatoes, basil, oregano, and pepper. Let tomato mixture cook for approximately 30 minutes.

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and cool on waxed paper or aluminum foil to prevent the noodles from sticking together.
  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, combine ricotta cheese, mozzarella cheese, Parmesan cheese, parsley, salt and pepper; fill manicotti with cheese mixture.

GRANDMA'S KITCHEN OLD-WORLD MANICOTTI

I came across this recipe on a Grandma's Kitchen recipe card and found it to be the BEST manicotti I have ever experienced. It is a favorite of all our friends and family and most definitely a staple meal in our home. If you've always been the type to shy away because of the terror of stuffing the shells, well I've thrown in a little secret of mine to walk you through the process.

Grandma's Kitchen Old-World Manicotti image

Steps:

  • Preheat oven to 350°F Spray 13x9-inch baking dish with nonstick cooking spray.
  • Cook pasta according to package directions(be sure to not over cook, they need to be a little chewey for easier stuffing). Carefully remove each shell and rinse with cool water. Let pasta dry on paper towels. Don't get too upset if a couple break, its bound to happen :).
  • For the filling, in a large ziplock bag (seriously!), put in 3 cups mozzarella with the ricotta and fresh basil. Seal the bag tightly. Smush the bag around with your hands until the ingredients are thoroughly mixed (it's a nice stress reliever too!).
  • Snip off the bottom corner of the ziplock bag (the point is to have the hole a tad smaller than the manicotti opening, where you can just barely slip it into the shell). Use this method to squeeze the cheese mixture into each manicotti.
  • See, that wasn't so bad! ;).
  • Spoon 2 cups spaghetti sauce into prepared baking dish. Arrange stuffed pasta over sauce. Pour remaining spaghetti sauce over top of pasta. Sprinkle with remaining mozzarella.
  • Bake manicotti for 15 minutes. Sprinkle with the Parmesan; bake for 10 minutes longer. Serve immediately.

Manicotti Alla Romana image

Steps:

  • Heat oil in a large skillet over medium heat. Saute onions until translucent. Saute garlic for 1 minute and stir in ground beef. Cook until well browned and crumbled. Season with salt and set aside to cool.
  • Cook spinach according to package directions. Meanwhile, bring a large pot of lightly salted water to a boil. Add manicotti shells and parboil for half of the time recommended on the package. Drain and cover with cool water to stop the cooking process and prevent the shells from cracking.
  • To the ground beef mixture add the cooked spinach and ricotta cheese. When the mixture is cool, add the beaten eggs. Spread 1/4 cup spaghetti sauce in the bottom of a 9x13 inch baking dish. Gently drain the manicotti shells and carefully stuff each one with the meat and cheese mixture; place shells in prepared dish. Lightly cover the dish with plastic wrap or a clean, damp towel to prevent shells from cracking.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Prepare the white sauce by melting the butter in a small saucepan over medium heat. Stir in flour and chicken bouillon. Increase heat to medium-high and cook, stirring constantly, until it begins to bubble. Stir in half and half and bring to a boil, stirring frequently. Cook for 1 minute, stirring constantly. Remove from heat and stir in parsley. Pour or ladle the sauce evenly over the stuffed shells.
  • Stir the basil into the remaining spaghetti sauce. Carefully pour or ladle spaghetti sauce over the white sauce, trying to layer the sauces without mixing.
  • Cover and bake for 40 minutes. Remove from oven, uncover and sprinkle with Parmesan cheese. Bake, uncovered, for 10 minutes more.

Mamma Mia, Now That's Italian Manicotti image

Steps:

  • For TOMATO SAUCE:.
  • Heat olive oil in a 2-qt. saucepan.
  • Add chopped onion and garlic.
  • Cook for 8 minutes or until soft but not brown.
  • Add tomatoes, paste, basil, sugar, salt and pepper. Break up tomatoes.
  • Reduce heat to low with pan partially covered and cook for 40 minutes.
  • Put a thin layer of tomato sauce in bottom of 9 x 13" pan and set aside.
  • For FILLING:.
  • Heat olive oil in skillet. Add onion and garlic, cook until soft.
  • Stir in chopped spinach and cook, stirring constantly until all mixed together. Remove from skillet and put into a large mixing bowl.
  • Melt 2 T. butter in same skillet and lightly brown ground beef. Drain off grease.
  • Add the meat to the onion and spinach, along with the Parmesan cheese, Half n' Half, eggs, and oregano. Season to taste, with salt and pepper. Mix together thoroughly, but gently.
  • Boil manicotti to al dente stage and stuff with filling. Lay manicotti gently in pan over the thin layer of tomato sauce.
  • For BESCIAMELLIA:.
  • In a saucepan, melt butter and remove from heat.
  • Stir in flour and pour in the milk and Half 'n Half, about a 1/2 cup at a time. Mix well.
  • Return pan to high heat and cook, stirring constantly, until smooth and thickened. Season with salt and pepper.
  • Spoon besciamellia over stuffed manicotti shells.
  • Top with remaining tomato sauce.
  • Sprinkle with Parmesan cheese.
  • Bake at 350 degrees uncovered on middle shelf of oven for 25 minutes. Let set 5 minutes before serving.

MOM'S SPAGHETTI SAUCE

A great sauce for any pasta dish, I usually leave the meats out for most baked dishes. This recipe came to me from my Mother, a full-blooded Italian-American, with a few minor additions/changes by me. I have never found a recipe that I like as much, but then I am probably biased. Cook time is 1 to 8 hours depending on how long you have. Mom used to cook it all day. I like to go at least two hours, but I have spent as little as 45 minutes on the cook time.

Mom's Spaghetti Sauce image

Steps:

  • Cut celery and onion (and bell pepper if used) as fine as you prefer.
  • If you like chunky style sauce make the pieces bigger, I like mine chopped fairly small.
  • In a large skillet, heat 1-2 tblspn of oil, when oil is hot (not smoking) add celery and stirfry.
  • As celery begins to clarify, add onion (and bell pepper, if used) and stirfry until it begins to glaze, add chopped garlic, stir for a short time (don't let anything begin to brown).
  • If using meat, add ground beef or stew beef and brown, stirring regularly, adjust heat to make sure nothing burns.
  • Salt and black pepper to taste.
  • Transfer to a larger pot (if you have a good sized pot that you can brown in, you can just start with that instead of using the skillet.).
  • Stir in tomato paste and cook until the color darkens.
  • Stir in tomatos and tomato sauce.
  • Add spices (Italian seasoning or individual spices) to taste.
  • Add 3 Bay Leaves.
  • Stir in mushrooms and/or black olives and crushed red pepper, if desired.
  • Stir in 1-2 cans of water (I use the tomato paste, tomato and tomato paste cans to get the leavings out of them.).
  • Adjust heat to simmer.
  • Let cook for at least 1 hour, longer if you can, and stir regularly.
  • Check spice to taste and add what you want.
  • You can cook this for a little while or for a longer time.
  • I prefer at least 2 hours to give all the spices a chance to blend well.
  • But it can be cooked for as little as a half hour.
  • If you want it to cook for a long time, monitor the thickness and add water as needed.
  • Don't forget to remove the Bay Leaves before serving.
  • Some people like to add a pinch of sugar to cut the acidity, but I believe that the Bay Leaves accomplish this and have never used sugar.
  • When done, serve over or mix with the cooked pasta of your choice.
  • Add grated parmissan if desired.
  • Also individuals can add crushed red pepper to their own servings, for those who like it a little spicier.
  • If making a baked dish such as Lasagna, Ziti, etc.
  • you may want to make the sauce a little thinner (add water) to start with.

Steps:

  • To Prepare Crepes: In large bowl, mix all ingredients until smooth. Lightly grease small frying pan. Place over low heat. Fill a large cooking spoon with batter and spread into thin layer in pan, filling in holes with extra batter. Cook for 30 seconds on each side, being careful not to fold or rip crepe while flipping. Chill finished crepes in refrigerator until ready to prepare manicotti. To prepare Manicotti: Preheat oven to 350 degrees. Combine all filling ingredients in a large bowl and set aside. Line bottom of baking pan with a thin layer of tomato sauce and set aside. Fill each crepe with 1 tablespoon of mixture and top with a thin slice of mozzarella. Fold flaps of manicotti to form a tube. Place manicotti into baking pan with the flap side down. Top with sauce and grated parmesan. Bake at 350 degrees for 20-25 minutes.
