- Bring water, peas, and salt to a boil in a saucepan; cook until peas are just tender, about 2 minutes. Drain and return peas to saucepan. Reduce heat to medium and stir in flour. Add butter and enough milk to barely cover peas. Cook and stir until thickened, 5 to 10 minutes.

Steps:
- Melt butter in a saucepan over medium heat. Stir flour, sugar, and pepper into the melted butter until smooth.
- Remove saucepan from heat. Stir peas and milk into the butter mixture. Return saucepan to medium heat; bring to a boil while stirring regularly. Reduce heat and cook at a simmer until the sauce thickens, about 10 minutes.

MY MOM'S PEAS AND RICE

Steps:
- Place a large pot over medium-high heat, and add the salt pork. Cook for several minutes, until the pork renders a tablespoon or so of fat. Add the onion, garlic, and pepper to the pot, lower the heat to medium-low, and continue to cook, stirring, until the onions are translucent, 5 to 7 minutes.
- Add the rice to the pot and stir to combine. Pour in the water and season with salt and pepper. Bring to a boil over high heat, then reduce the heat to a simmer and cook, covered, for 20 minutes. Check the pot and stir its contents to make sure that the rice isn't sticking to the bottom.
- Stir in the beans into the rice and cook for 10 minutes more. Remove the salt pork and discard. Serve immediately.

Steps:
- Put the peas in a pot with the butter, chicken broth and evapotated milk.
- Cook over medium heat for 15 minutes.
- Add the sugar if desired.
- Mix the corn starch with the water and add to pot.
- Add the salt and pepper to taste.
- Add the pearl onions.
- Reduce heat and simmer for another 10 to 12 minutes and serve.

MAMA'S CREAMED PEAS FOR SICK TUMMIES
When I was a little girl and I would get sick, my Mama (Mary in LA) would always serve me Creamed Peas on Toast. It was light enough for an upset tummy but filling enough to make a sick little girl not be hungry anymore. I never could make it like Mama could until now. I finally figured out where the recipe came from! It is from a book called "The Culinary Arts Institute Encyclopedia of Cooking and Homemaking" which was published in 1940. I decide to post this recipe as a tribute to my Mama. Now all mommies can help their daughters sick tummies feel better just like mine did all those years ago. Thanks Mama!

- Whisk in flour and allow to cook for 1 minute.
- Slowly add milk, whisking the whole time to prevent lumps.

CREAMED PEAS WITH MUSHROOMS AND ONIONS.
Yummy side dish. I love peas! Use low fat milk for a lighter sauce or half and half for a richer sauce. I usually use what I have on hand. Sometimes I add a small handful of swiss cheese and a small handful of grated parmesean cheese to make it even yummier! I also find canned mushrooms work well in this if you are not against all things canned :) This is from southern cooking.
