It's not pretty but, it's a tasty, busy-night, kid-friendly meal. It's not 'gourmet,' but it's hot filling and easy. The prep time is generally limited to how fast your can opener works and how hard it is to unwrap your meat. The big bonus is that it's a complete one-pot meal with no chopping, unless you want to.

Steps:
- Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes.
- Stir pasta and cheese mixture from the macaroni and cheese package into the beef. Add tomatoes, milk, peas, and corn to the beef mixture; stir. Bring the mixture to a boil, reduce heat to medium-low, place a cover on the skillet and cook at a simmer until the noodles are tender, about 12 minutes.
- Season the dish with seasoned salt. Stir about half of the Cheddar cheese into dish to melt. Top with remaining cheese.

MOM'S 2-WAY BEEF SHIPWRECK
This is a "2-in-one" recipe... A while back I found a "Shipwreck" recipe on a website and tried it. It was way too dry and we didn't like it much. - 1. Place sliced potates in bottom of a 13 x 9 x 2 casserole dish.
- 2. Spread chopped onions over potatoes.
- 3. Crumble ground beef over onions and potatoes; sprinkle with salt and pepper. (An easiness hint: I actually don't even measure the salt and pepper, but I have a salt shaker that has a mix of 2/3 salt to 1/3 pepper and I just shake it over the whole top)
- 4. Pour beans on top of beef. (Do NOT drain the beans, this is one of the things that keeps the casserole from being too dry)
- 5. Pour tomato sauce on top of all.
- 6. Cover and bake for 1 hour at 350.
- 7. Note: I usually stir the mixture when it comes out, just to make sure the potatoes are tender.
- 8. Extra Note (see below for another variation) I call them "Red Shipwreck" or "Green Shipwreck" depending on the beans used :) Here is the other...
- 9. USE: One 15 oz can of green beans (I think I drained them) in place of red beans. One 10 oz can cream of mushroom soup, thinned with a little milk in place of the tomato soup.

- Place soup bones and water in a Dutch oven or soup kettle. Slowly bring to a boil. Reduce heat; cover and simmer for 2 hours. , Set beef bones aside until cool enough to handle. Remove meat from bones; discard bones and return meat to broth. Add the potatoes, carrots, onion, barley, tomatoes, salt, pepper, garlic and bay leaf if desired. - 1. Lightly brown beef in skillet with garlic, drain, and add salt, pepper and some Worchestershire sauce to it. Beef should still be rare as it will continue to cook in the oven.

- Place browned hamburger in the bottom of the roast pan.

- In a large skillet over medium-high heat, cook the beef, onion and garlic until the beef is no longer pink; drain. Stir in the chili powder, salt, oregano, cumin and cayenne.
- In the prepared baking dish, layer half of the potatoes to cover the bottom of the pan (overlapping some is fine). Season the potatoes with a little bit of salt and pepper. Top with half of the beef mixture, half of the beans and half of the bacon. Pour one can of soup over top. Repeat the layers once more, starting with potatoes (seasoned with salt and pepper), then beef, beans, bacon and soup.
- Cover with foil and bake 1 hour. Remove foil, sprinkle the cheese and buttered Corn Flakes on top, and return to the oven (uncovered) for about 10-15 more minutes (or until the cheese is melted, the topping is golden brown, and the potatoes are tender). Garnish with fresh parsley just before serving.
