- Cook macaroni according to package directions. Meanwhile, in a saucepan, melt 4 tablespoons butter over medium heat. Stir in flour, salt and pepper until smooth. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat. Add the cheeses, stirring until cheese is melted. Drain macaroni., Transfer macaroni to a greased 1-1/2-qt. baking dish. Pour cheese sauce over macaroni; mix well. Melt the remaining butter; add the bread crumbs. Sprinkle over top. Bake, uncovered, at 375° for 30 minutes or until heated through and topping is golden brown.

- Preheat oven to 400 degrees F.
- In a small saucepan over medium heat, melt butter and then stir in flour; cook for 1 minute or until lightly golden. Slowly add the milk to the flour mixture, stirring until thickened, and then stir in the 3 cheeses until fully melted. Season with salt and pepper, to taste. Add cooked macaroni and stir to coat evenly. Transfer to a shallow baking dish. Bake for about 45 minutes, until brown and crisp on top.
- Remove from oven and preheat the broiler. Sprinkle Parmesan and bread crumbs over top. Return to the oven and broil until cheese is bubbly.

- For the macaroni: Preheat the oven to 350 degrees F. Butter a 2-quart casserole dish.
- Bring 4 quarts of water to a boil in a large saucepan. Add the salt and macaroni. Bring the water back to a boil and cook the macaroni until tender, about 12 minutes. Drain well.
- For the cheese sauce: Meanwhile, melt the butter in a 1-quart saucepan. Using a wire whisk, stir in the flour and salt, stirring and cooking over medium heat until the roux bubbles and the flour turns pale brown, about 3 minutes. Slowly whisk in 1 cup of the milk and then whisk in the remaining 1 cup milk. Continue to cook, stirring constantly, until the sauce thickens. Add the cheese and stir until it melts. Add the drained macaroni to the cheese sauce and mix thoroughly.
- For the topping: In a small bowl, stir the breadcrumbs with the butter until the crumbs are moistened.
- Transfer the macaroni and cheese to the prepared baking dish and top with the buttered breadcrumbs. Bake until the dish bubbles around the edges, about 15 minutes.

A friend of mine sent this recipe to me when I got my first apartment, because she knows how much I hate cooking! It's really easy -- even I can make it -- and tastes great. - Preheat oven to 350 degrees F (175 degrees C).

MOM'S MACARONI & CHEESE

- Preheat the oven to 350 degrees F. Precut 1 lb. of cheese into cubes, and the remainder of the cheese shred or slice thinly and set aside. Place the butter in saucepan and let it melt. Add the cubes of cheese and milk. You may need to add more milk, depending on the consistency of the sauce and how you like your sauce-(thick or thin). Sift over low to medium heat and add the Wondra flour a little at a time until the sauce thickens. Remove from heat once you reach the desired consistency of your sauce. Drain the diced Italian tomatoes and add to the cheese sauce.
- Bring water to boil in large pot and add box of macaroni and cook for desired amount of time as specified on the box. Strain the macaroni and place in a large mixing bowl. Add the sauce and mix/blend together.
- Pour half of the mixer in the baking dish, add half or all* of the cheese (that you set aside earlier) to cover the macaroni and cheese, and pour the rest of the macaroni and cheese mixture on. *You may either place the rest of the cheese that you set aside if you did not use in the middle layer or you may sprinkle on the bread crumbs to make a light topping over the macaroni and cheese.
- Place in the oven for 30 minutes to 45 minutes to heat thoroughly and serve. Refrigerate the leftovers.

- 2. In large skillet, lightly brown chopped onions in butter or margarine. Stir in tomato soup, water and 3/4 cup KRAFT Shredded Cheddar Cheese. Heat until cheese melts.
- 3. Blend tomato soup and cheese mixture with macaroni into 1 1/4 quart casserole dish. Layer tomato and cheese mixture with solid cheddar cheese slices 2 or 3 times, ending with slices on top. Sprinkle with additional 1/2 cup shredded cheddar and bread crumbs.
- 4. Bake at 350°F for 30 minutes. Serve and enjoy!

- Cook macaroni in boiling salted water until tender; drain.
- Mix cooked macaroni with butter, stirring well.
- While macaroni is cooking, cook ground beef, garlic and onion in a large skillet until beef is browned and cooked through.
- Drain any accumulated fat.
- Add chili powder, salt, pepper, tomato sauce, diced tomatoes (with their juice), mixing well.

This is not your everyday mac & cheese. It always tasted best when Dad would stop in Pinconning MI on his way home from deer hunting each year to pick up a huge round of Pinconning cheese. Mom had 5 hungry kids sitting at the table waiting for this to come out of the oven!

- Note 1: If you can't find Ready-Cuts, use a small penne pasta or mostaccioli. Elbows don't have enough substance for this recipe.
- Note 2: You may use stewed or diced tomatoes.
- Note 3: I use a combination of Pinconning, Colby, and mild Cheddar cheese. You may use your favorite(s).
- Boil macaroni in salted water, 3 minutes less than package directions. Drain. It will finish cooking in the oven.
- Sauté onion in butter until soft and translucent. Add the can of tomatoes to the onions and let simmer over low heat for 5 minutes.
- Cut cheese into small chunks and set aside.
- Preheat oven to 350°.
- Spray a 9X14" glass pan with non-stick cooking spray. Layer half the tomatoes and cheese in the pan. On top of this, layer 1/2 of the cooked, drained macaroni, then the remaining tomatoes, then the remaining macaroni, and top with the remaining cheese.
- Pour 1/4 cup water over the top. Cover with foil.
- Bake in the oven for 35 to 45 minutes. Remove from oven and let stand for 5 minutes before serving.
