MOM-MOM'S BLONDE BROWNIES

The chewy kind, with chocolate chips. My mom's handwritten recipe included "1 Blonde Wig", which always made her giggle. Family Note: Mom-mom used margarine, but butter is better.

  • 1.Preheat oven to 375 degrees F. Butter and flour a 9-by-13-inch glass baking dish and set aside.

  • 3. Stir butter into brown sugar in a large bowl until smooth; cool to room temperature.
  • Meanwhile, in another medium bowl, whisk together flour, baking soda, and salt; set aside. Whisk eggs and vanilla into sugar mixture. Add flour mixture a bit at a time and mix until a smooth thick batter forms. Fold in chips, as desired.

  • Remove from oven; cool slightly. Invert onto a rack to release; cool completely. Cut into squares and serve.

2 sticks (1 cup) unsalted butter, cut into small piece, plus more for greasing
2 1/4 cups all-purpose flour, plus more for dusting
1 1/2 cups firmly-packed light brown sugar

BAKLAVA BLONDIES

I love baklava and I love blondies...so here they are combined into one dessert, stealing the chewy, cakey texture from a blondie and infusing it with the nutty texture and honey-heavy flavor of baklava. They come together so easily and they last for a good few days in the fridge (I can't resist a cold chewy blondie)!

Steps:

  • Place an oven rack in the middle position. Preheat the oven to 350 degrees F.
  • Grease an 8-inch square baking dish with vegetable oil cooking spray and line with a piece of parchment paper so that it has 2 inches of overhang on 2 sides of the pan.
  • To make the batter: In a large bowl, combine the brown sugar, butter, honey, salt, cinnamon, vanilla extract and lemon zest. Whisk together for 1 minute until smooth. Add the egg and whisk to incorporate. Add the flour and whisk to combine. Fold in the nuts, scrape into the prepared baking dish and bake until puffed and golden brown on the edges but still light in the center, 28 to 30 minutes. Allow to cool in the pan to room temperature.
  • Remove the blondie from the pan and spread the Frosting on top in a swirly layer. Garnish with chopped pistachios and refrigerate for 30 minutes to allow the frosting to get firm for nice slicing. Slice into diamond-shaped bars and serve.
  • To prepare the frosting: In the bowl of a stand mixer fitted with a paddle attachment (or with a hand mixer), cream together the butter and honey until light and creamy, 30 seconds to 1 minute. Add the powdered sugar, lemon zest and juice and salt, then whip for 2 to 3 minutes or until pale and fluffy.

Steps:

  • Adjust oven rack to lowest position; heat to 325 degrees. Spray a 9-by-13-inch baking pan with vegetable cooking spray. Fit a12-by-18-inch piece of heavy-duty foil into the pan so you can use the foil overhang as a handle to pull baked blondies from the pan; coat foil with cooking spray.

Slowly whisk hot sugar mixture, then dry ingredients, into eggs. Stir in optional add-ins (if using chocolate, let batter cool slightly first).
  • Scrape batter into prepared pan, then bake until blondies are just set, about 45 minutes. Remove from oven and let cool for five minutes. Pull blondies from the pan using foil handles and set on a wire rack. Cool completely before cutting into 24 pieces.

WHAT'S THE DIFFERENCE BETWEEN BROWNIES AND BLONDIES? THE …
Instead of an intense chocolatey flavor, blondies have notes of caramel and butterscotch, thanks to brown butter, a key ingredient in many blondie recipes. Brown butter is made by slowing heating butter in a saucepan until it becomes a deep amber color and smells nutty; the flavor and color of brown butter help distinguish blondies from brownies.
