BOB'S ITALIAN SAUSAGE TORTELLINI SOUP
This is the soup that I won 1st place in a soup contest at the Rail Festival in Fostoria, Oh on September 25, 2010

Steps:
- Place the sausage in a large pot over medium high heat brown the sausage. Add the onions, garlic, peppers and carrots. When those ingredients have softened, add the beef broth, water.
- Next add the beef stock, water, wine, tomatoes, basil, oregano and tomato sauce. Bring to a boil, reduce heat to low and simmer for 30 minutes, skimming any fat that may surface.
- Add the zucchini, yellow squash, and tortellini, Simmer for 10 minutes, or until tortellini is fully cooked.
ITALIAN TORTELLINI SOUP
I can't remember where I got this recipe but it is irresistible. My dh loves this. It is meaty and stick to your ribs delicious. Enjoy!

Steps:
- Remove sausage casing. In dutch over brown sausage.
- Remove sausage; reserve 1 tbsp drippings.
- Saute onions and garlic in drippings until onions are tender.
- Add broth and next 7 ingredients, and add sausage.
- Bring to boil, reduce heat and simmer uncovered 30 minutes.
- Skim fat from soup and stir in zucchini and remaining ingredients, except parmesan cheese. Simmer covered an additional 35-40 minutes until tortellini is tender.
- Serve topped with parmesan cheese.
- If you prefer to use fresh tortellini, simmer 20-35 minutes until tender.

MOM'S ITALIAN TORTELLINI SOUP

Steps:
- Cook and stir sausage in a large saucepan over medium heat until browned and crumbly, 5 to 7 minutes; drain. Add mushrooms, onion, and garlic; cook and stir until mushrooms and onion are tender, about 5 minutes.
- Mix tomatoes with juice, red wine, beef bouillon, basil, and pepper into sausage mixture; bring to a boil. Reduce heat to medium-low, cover saucepan, and simmer, stirring occasionally, until heated through, about 15 minutes. Bring liquid to a boil and add tortellini; cook until pasta is heated through, about 12 minutes.
- Stir zucchini into soup and simmer until tender, about 5 minutes. Remove soup from heat and let stand 5 minutes before serving.

TORTELLINI SOUP
It's a wonderful comfort food. Friends and family always rave about this soup and want the recipe. Tastes even better after warming up the leftovers. This is a family favorite I got from my Mother-in-law. I use the dry packaged tortellini. If you're a garlic lover, don't be afraid to add more. If you're a spinach lover add more to the leftovers when warming over. When serving the soup sprinkle desired amount of parmesean cheese on top of individual portion and stir in.

Steps:
- Heat olive olive over medium heat.
- Saute garlic and onion 10 - 15 minutes.
- Add chicken broth and italian herbs. Bring to a boil.
- Stir in tortellini, then simmer 10 - 12 minutes.
- Stir in tomatoes, simmer 5 minutes.
- Add spinach, cook 3 minutes.
- Salt & pepper to taste.
- Season with parmesean cheese on serving portion.

RUSTIC ITALIAN TORTELLINI SOUP
My DD found this in a recent issue of Taste of Home Healthy Cooking and made it for dinner. Although she subbed a combo of hot and mild sausage for the turkey links, it turned was great! Paired with Italian bread this was a filling and hearty soup, especially good on this raw, rainy Sunday night.

- Crumble sausage into a Dutch oven; add onion.
- Cook and stir over medium heat until meat is no longer pink.
- Add garlic; cook and stir 2 minutes longer.
- Add the broth, water and tomatoes. Bring to a boil.
- Stir in tortellini; return to a boil.
- Reduce heat; simmer, uncovered, for 5-8 minutes or until tortellini are tender, stirring occasionally.
- Add the spinach, basil, pepper and pepper flakes; cook 2 - 3 minutes longer or until spinach is wilted.
- Serve with cheese if desired.

Steps:
- Place the carrots, onion, celery, garlic, thyme and 2 cups of the broth in a 6-quart saucepot.
- Heat to a boil. Reduce the heat to low. Cover and cook for 10 minutes or until the onion is tender.
- Add the remaining broth, zucchini(or/and vegs. of choice), tomatoes(fresh or canned), tortellini and beans. Heat to a boil. Reduce the heat to low. Cover and cook for 15 minutes or until the tortellini is tender. Serve with grated Parmesan cheese if desired.
