Moms Spinach Salad Recipes
MOM'S SPINACH SALAD
This is my Mom's spinach salad recipe that we grew up with and it's always been a favorite of anyone that's tried it. I believe Mom cut the recipe from the newspaper. Prep time is approximate (I like to tear the stems off the spinach so that takes a few more minutes, your choice), and the cooking time is for the hard boiled eggs. This is very good the next day (spinach kind of wilts in the dressing). I hope you like it as much as we do!

Steps:
- Combine celery, onion, 3 chopped eggs, cheese & spinach.
- Combine salt, pepper, Tabasco, vinegar, horseradish & mayonnaise.
- Mix dressing with vegetables.
- Put in serving dish, garnish with reserved grated hard boiled egg & sprinkle with paprika.
- Chill.

This is the salad that my mom makes every time I come home, and is the only way to get my brother to eat spinach!

- Hard boil two eggs.
- Peel eggs and dice into small pieces.
- Slice apple into thin wedges.
- Combine spinach, egg, craisins, apple and walnuts in a bowl.
- Toss salad with your favorite dressing.

Steps:
- Cook bacon and chop. Cook eggs, peel and slice. Drain water chestnuts.
- Make dressing: Combine oil, sugar, ketchup, salt, vinegar,worsteshire, grated onion in a blender. Make dressing.
- In a bowl combine, spinach, bacon, eggs, sprouts, and chestnuts. Pour dressing right before serving. It makes a lot of dressing so use to your preference.
