MOM'S PARTY CHICKEN
This is an easy, yet simply elegant recipe that is one of my mother's specialties ! The extra sauce is great served over rice or noodles.

Steps:
- Wrap each breast in 1/2 piece of bacon Line bottom of casserole dish with chipped beef.
- Mix together sour cream and soup.
- Place chicken in dish.
- Add sauce over top.
- Bake at 375 degrees for 3 hours.
- *Tip*:mouth-watering tender if prepared night before--bake next day.
MAMA'S KINGS RANCH CHICKEN CASSEROLE (SOUTHEAST TEXAS STYLE)
My mom cooked this for us for special occasions (especially for birthdays). It's is an amazing twist to the original kings ranch chicken casserole. I have made this for several occasions now that I'm on my own and everyone has loved it, and it's really easy to make too!

Steps:
- Add enough water to pot to cover chicken completely. Boil chicken until it is completely done( normally takes about 45 minutes).
- Preheat oven to 350.
- In a large mixing bowl combine the cream of chicken, cream of mushroom, Rotel tomatoes and 1/2 to 3/4 a can of water. Mix well.
- In a 9X13 pan layer the ingredients starting with the Doritos, then the shredded chicken, cheese, and soup mixture on top. Repeat layering the ingredients in the same order until you get to the top of the pan or run out of ingredients.
- Place pan in the oven and bake for 20 minutes.
TEXAS CHICKEN
This my copycat of one of K.C. Masterpiece Restaurant's chicken recipes. I added the ranch dipping sauce. It's very basic but has a lot of flavor, also a very filling low carb recipe for those of you who subscribe to such diets.

- Marinade chicken in Franks Red Hot sauce.
- Bake chicken breast (I use an indoor grill).
- When the chicken is very close to done top with more Franks sauce and top with roast beef and cook till beef is warm through out.
- Top with cheese and melt under broiler.
- Ranch dipping sauce.
- Ranch dressing
- Cayenne pepper to taste.
- Serve with more Franks if desired.

MOM'S MOIST ROASTED CHICKEN
Growing up my mom would make fried chicken but it was always greasy - and always dry so we did this the other day and it came out so very very good.....so my daughters called this Mom's Best.

Steps:
- Place chicken pieces into buttermilk, hot sauce, salt, pepper and smashed garlic. Make sure you work the buttermilk into the chicken pieces. Cover with plastic wrap and place in the fridge for anywhere from one hour to 24 hours. (I took the skin off of the chicken breasts, left the skin on the smaller pieces.).
- Remove the chicken from the marinade, do not dry, just let the buttermilk drip off. Combine flour with cayenne salt and pepper, dredge each piece through the flour - in a separate plate add your panko place each piece of chicken into the panko and press into the chicken.
- Heat the oil to 300°-325°F place the chicken into the oil and allow to cook without turning for the first 8 minutes, turn and when you have completed the turn check the internal temp of the chicken it should be between 140°-145°F.
- Place onto paper towel to drain any excess oils - place into the oven for 15 minutes at 325°F Your internal temp should be 160°F -- enjoy!

- Preheat oven to 375°. Cook spaghetti according to package directions for al dente. Drain; transfer to a greased 13x9-in. baking dish. Add 2 teaspoons butter and toss to coat. , Meanwhile, in a large skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Discard drippings, reserving 1 tablespoon in pan. Add mushrooms, onion and green pepper to drippings; cook and stir over medium-high heat 5-7 minutes or until tender. Remove from pan., In same pan, heat remaining butter over medium heat. Stir in flour, salt and pepper until smooth; gradually whisk in broth. Bring to a boil, stirring occasionally; cook and stir 3-5 minutes or until slightly thickened. Add chicken, peas, pimientos and mushroom mixture; heat through, stirring occasionally.
