MONSTER MINI CUPCAKES

Mini cupcakes are usually just the right size for most kids. These little monsters are made out of chocolate cupcakes baked from scratch. You will need a grass tip in order to create the fur. You can make them different colors by using other food colors.

Steps:

  • Combine milk and vinegar in a bowl. Let stand until milk curdles, about 5 minutes.
  • Preheat oven to 350 degrees F (175 degrees C). Grease a 24-cup mini muffin tin or line cups with paper liners.
  • Combine 1/2 cup butter, white sugar, and vanilla sugar in a large bowl; beat with an electric mixer until smooth and creamy. Add eggs one at a time, beating well after each addition.
  • Mix 3/4 cup plus 1 tablespoon flour, cocoa powder, baking powder, baking soda, and salt in a bowl. Alternate adding flour mixture and curdled milk to the creamed butter mixture, mixing until batter is well blended. Spoon batter into the prepared muffin cups, filling each 3/4 full.
  • Bake in the preheated oven until tops spring back when lightly pressed and a toothpick inserted in the center of 1 cupcake comes back clean, about 14 minutes. Cool in the muffin tin for a few minutes, then transfer to a wire rack to cool completely, about 1 hour.
  • Combine cream cheese and 1/4 cup butter in a bowl; beat with an electric mixer until well combined. Mix in vanilla extract. Stir in confectioners' sugar gradually. Color frosting orange with a few drops of food coloring.
  • Place orange frosting in a pastry bag fitted with a grass tip. Hold the pastry bag at a 90-degree angle 1/8 inch above the surface of a cupcake. Squeeze bag to form orange 'fur' by pulling tip up and away when the icing strand is about 1/2 inch high. Repeat to cover cupcake evenly with fur.
  • Add 2 eyes to each cupcake. Cut dried mango into small strips and arrange into the frosting as 'horns'.

Easy Monster Cupcakes image

Steps:

  • Line cupcake pan with liners.
  • Make cupcakes per directions on box.
  • Cool cupcakes completely.
  • Stir frosting as per instructions on box.
  • Put frosting on top of cupcake roughly in the shape of a skull (see photo) leaving part of the cupcake exposed.
  • Decorate with candies. (see photos).
  • Melt chocolate chips in a small microwave safe bowl for about 20 seconds. This depends on your microwave.
  • Don't over melt. Just do it until the chips are soft with some solid left in the center of the chip. Stir and the rest will melt. Add more time if needed, but do it slowly, about 10 seconds at a time.
  • Dip a tooth pick into the chocolate chip and dot the Skittles (or whatever candy you use for the eyes). The chocolate serves as the pupil of your monters' eyes. Please make sure the "s" stamped on the Skittles is facing down and the blank side is facing up.

S'mores Monster Cupcakes image

Steps:

  • For the cupcakes: Preheat the oven to 350 degrees F. Line a 12-cup muffin tin with black cupcake liners.
  • Mix the flour, baking soda and salt in a medium bowl. Microwave the milk in a large microwave-safe bowl until bubbling, about 1 minute. Whisk in the cocoa until dissolved. Whisk in the granulated sugar, oil, vanilla and egg until smooth. Fold in the flour mixture until combined.
  • Divide the batter among the cupcake liners (about 1/4 cup per liner). Bake until a toothpick inserted in the center comes out clean, 15 to 18 minutes. Let the cupcakes cool in the pan for 10 minutes, then remove to a wire rack to cool completely, about 1 hour.
  • For the frosting: Meanwhile, beat the butter in a stand mixer fitted with a paddle attachment on medium-high speed until light, fluffy and almost double in size, 4 to 5 minutes. Turn the mixer to low, add the marshmallow creme and confectioners' sugar and beat until just combined, about 1 minute.
  • Divide the frosting into 5 separate bowls. Color one bowl with purple gel food coloring, one bowl with orange gel food coloring, one bowl with neon green gel food coloring, one bowl with blue gel food coloring and one with black. Spoon into 5 separate piping bags fitted with small star tips (we used a size 15 tip).
  • For the decorations: Pipe monster faces and hair on top of the chocolate-covered graham cookies. Decorate with candy eyes. Use the remaining frosting to pipe on top of the cupcakes. Place one decorated cookie on top of each cupcake.

Steps:

  • Heat oven to 190C/170C fan/gas 5 and line a 12-hole muffin tin with deep cake cases. Put all the cake ingredients into a large bowl and beat together with electric hand beaters until smooth. Spoon the mix into the cases, then bake for 20 mins until risen and a skewer inserted into the middle comes out dry. Cool completely on a rack. Can be made up to 3 days ahead and kept in an airtight container, or frozen for up to 1 month.
  • For the frosting, work the butter, milk and vanilla into the icing sugar until creamy and pale. Colour with food colouring, if using, then create your own gruesome monster faces using sweets and sprinkles.

Steps:

  • I used an icecream scoop full of frosting to get the right shape and then dipped in it coconut. Press the coconut on and tidy up the shape.
  • When the frosting has firmed a little cut a slice out near the bottom and push a cookie in (you may have to trim the cookie little depending on the size of your cookies). Or make his mouth further up and put cookie pieces around it.
  • The eyes I made by using melted white to make a circle and then dark chocolate in the middle. Don't make them all exactly the same - it adds a bit of character to the finished cakes!
  • Simple - very messy and lots of fun!

Frosting
The frosting I made using a vegetable shortening (in Aus its called So Lite, I think in the US Crisco is similar) and icing sugar mixture. You could use butter cream but the frosting is pure white and colours beautifully. You would need to double the buttercream you usually use for 12 cupcakes
Coconut - dyed blue to match the frosting
12 Choc chip cookies
Melted white and dark chocolate to make the eyes.

COOKIE DOUGH CUPCAKES

Can't decide between cookies or cake? Have both! I discovered this recipe on a blog (cupcakeproject.com) and made a few adjustments to the directions as the original was a little difficult to follow. These cupcakes are absolutely delicious and complete with a raw cookie dough surprise on the inside! Topped with some cookie dough icing and this makes for a fantastic treat for any occasion! (This recipe looks overwhelming, I admit, but it's pretty easy and well worth the effort!) NOTE: If you use any flour other than self-rising cake flour as the recipe calls for, it will cut the number of cupcakes in half!!)

Cookie Dough Cupcakes image

Steps:

  • Preheat oven to 400°F.
  • Mix together butter, flour, sugar, eggs, vanilla, baking powder and milk until smooth and well-mixed.
  • Fill 12 cupcake liners approximately 3/4 of the way up. If using anything other than self-rising cake flour, fill only 6 cupcake liners to the very top.
  • Bake at 400F for 15-20 minutes.
  • While cupcakes are in the oven, combine flour, salt, butter, sugar, vanilla and milk in a large bowl.
  • Mix well until all the flour has disappeared. Set aside one cup of the batter for the icing.
  • Add in chocolate chips to the remaining batter and set aside.
  • In a small bowl, mix together one cup of cookie dough batter with 1/2 cup of heavy cream. Mix well until consistency is that of icing.
  • When cupcakes are cooled, use a paring knife to cut a hole in the top.
  • Frost cupcakes with cookie-dough icing.
  • Roll cookie dough into little balls and plop them in the centre of the cupcakes.
  • Serve and enjoy!
