MONTE CRISTO CASSEROLE WITH RASPBERRY SAUCE
My husband likes the ham and cheese sandwich known as the Monte Cristo. I based this casserole on the sandwich, and it makes a terrific brunch dish. -Mary Steiner, Parkville, Maryland

Steps:
- Line a greased 13x9-in. baking dish with half of the bread. Spread mustard over bread. Layer with ham, cheese, turkey and remaining bread (dish will be full)., In a large bowl, whisk eggs, milk, sugar and vanilla; pour over top. Refrigerate, covered, overnight., Preheat oven to 375°. Remove casserole from refrigerator while oven heats. In a small bowl, mix topping ingredients; sprinkle over casserole. Bake, uncovered, until golden brown, 30-40 minutes., Meanwhile, in a small saucepan, combine sugar and cornstarch. Stir in water, lemon juice and maple syrup until smooth. Add raspberries. Bring to a boil; cook and stir until thickened, about 2 minutes. Cool slightly., Let casserole stand 10 minutes before cutting. Serve with sauce.

MONTE CRISTO SANDWICH
Steps:
- Spread garlic butter on 1 side of each bread slice. Place cheese on 1 piece of bread, place ham on top of cheese. Cover with another slice of bread, followed by the slice of Cheddar and the chicken breast. Place the third piece of bead on top, making sure the meats and cheese are completely tucked inside of the bread. Place on a cutting board. Slice sandwich diagonally and hold together with long wooden picks. Refrigerate for about 30 minutes.
- Preheat deep-fryer to 350 degrees F.
- Beat eggs and water in a medium shallow bowl. Place the panko bread crumbs in another shallow bowl.
- Remove the sandwich from the refrigerator. Dip into egg wash, let drain, and then coat the sandwich completely in the panko bread crumbs. Fry in hot oil until golden brown (about 45 seconds). Remove from oil, drain on paper towels. Sprinkle with powdered sugar and serve immediately with raspberry sauce.

One of my sons could not get past the Monte Cristo sandwich at the Blue Bayou Restaurant in Disneyland. I made this casserole for him and he loved it. I hope you do to.

Steps:
- Preheat oven to 375^F.
- Pour milk in a microwaveable container and heat until hot.
- Whisk eggs in small bowl and add hot milk to eggs, blend.
- Cut French toast into 3/4 inch cubes; place in a large bowl.
- Pour egg mixture over bread cubes, toss gently, set aside.
- Combine ham, turkey, cheese and parsley in a bowl.
- Spray a 13x9x2 inch baking pan with cooking spray.
- Layer half the french toast cubes with half the meat mixture in bottom of pan.
- Repeat.
- Let stand for at least 10 minutes (It can be held overnight.) Set at room temperature for a few minutes before baking-or bake a little longer if it's cold.
- Bake 30-35 minutes until golden brown and set in center.
- Cool 10 minutes.
- Sprinkle with powdered sugar.
- Slice strawberries.
- Combine strawberries with strawberry ice cream topping in a small bowl.
- Cut casserole into squares.
- Serve topped with strawberry mixture.
CRANBERRY MONTE CRISTO SANDWICHES

- Heat oven to 425°. Spray jelly roll pan, 15 1/2x10 1/2x1 inch, with cooking spray. Mix sour cream and 1/4 cup cranberry sauce until well blended. Cover and refrigerate until serving time.
- Spread 4 bread slices with 1 teaspoon mustard each. Spread remaining bread slices with 2 teaspoons cranberry sauce each. Place turkey and cheese on mustard-spread bread slices. Top with remaining bread slices, cranberry sides down. Cut each sandwich into fourths.
- Place crushed cereal in shallow bowl. Beat eggs in another shallow bowl; beat in milk, sugar and salt until blended. Dip each sandwich into egg mixture, then coat with cereal. Place in pan. Drizzle margarine over top slices of sandwiches.
- Bake 12 to 15 minutes or until brown and crisp. Cut each sandwich diagonally in half. Serve warm with sour cream-cranberry sauce.

- Stack three slices of bread on top of each other and cut off crusts on all four sides. Repeat for remaining 5 sandwiches.
- On first slice of bread, layer turkey with one slice of American cheese. Top with a slice of bread, a layer of ham and one slice of provolone cheese. Complete the sandwich with a slice of bread. Repeat for remaining 5 sandwiches.
- On lightly floured surface, open one package of Crescent rolls. Stretch and roll the dough until it is nearly twice the size. Cut 3 strips from the dough. Wrap one sandwich in one strip of dough. Wet fingertips to wet the seams and pinch them together. Repeat with last two strips, then repeat with second package of dough until all 6 sandwiches are covered.
- In large skillet, heat canola oil (about 1 inch deep) until very hot (sprinkle of flour should make it sizzle). Working 3 sandwiches at a time, place them flat side down in oil. They should brown in 1-2 minutes. Flip all sandwiches until all sides are browned. Remove from oil and repeat for remaining sandwiches.
