MOONG SABZI (LENTIL VEGETABLE MIX)

Another really nice recipe I found in the newspaper. This Indian "sabzi" (vegetable accompaniment for rotis/Indian bread) also goes well with yogurt-rice or as filling for a really unique sandwich!

Moong Sabzi (Lentil Vegetable Mix) image

Steps:

  • Heat oil in a pan.
  • Add cumin seeds.
  • Wait until they crackle before adding the chili.
  • Now add onion, a pinch of salt, and saute on a low flame till the onion turns translucent.
  • Add the tomato and a bit of salt and let it fry on a low flame until the water starts separating from the tomato.
  • Add the moong dal and mix it well into the onion-tomato paste, add salt, let it fry for a few minutes.
  • Add enough water to just about submerge the moong, cover the pan with a lid and leave it to cook on a low flame.
  • Stir the mixture occasionally to make sure that the water does not evaporate leaving the moong stuck to the bottom of the pan.
  • When all the water has disappeared, check to see that the moong is soft enough to be eaten.
  • The mix should be dry and not liquid like Indian dal normally is.
  • Sprinkle the chopped corriander and serve hot with chappati or roti.

Steps:

  • Saute the vegetables in butter and then pour into the saucepan the vegetable stock and the tomato paste.
  • Salt and pepper the vegetable mixture and let it simmer for 30 minutes Prepare the egg and cheese mixture by beating the egg(s) and adding the cheese and the corn flour.
  • Stir well and pour the mixture into the saucepan when the vegetables are cooked.
  • Then simmer for another 5 minutes. Serve immediately.

TOMATO AND VEGETABLE MIX (PISTO MANCHEGO)

Posted for ZWT5 from http://www.euroresidentes.com. Pisto manchego is similar to ratatouille. It can be served warm to accompany a main dish or cold as a starter or to accompany a salad. The site suggests making a sandwich of baguette, Spanish omelet, and Pisto manchego-served warm or cold. Sounds good to me. Pisto can be used as a filling for sandwiches, savoury crepes, empanadillas or little puffed pastry pies or even as a pasta sauce. Pisto manchego freezes well, so you can make a big batch and use as required. This is an easy recipe for a traditional Spanish dish which originally came from Castilla la Mancha (hence it's name, Pisto Manchego) but is nowadays a favorite simple dish cooked and served all over Spain. If you want to add basil or oregano, the site suggests trying it. I am guessing at the number of servings as it does not say and it really depends upon whether you use it as a condiment or not.

Tomato and Vegetable Mix (Pisto Manchego) image

Steps:

  • Boil some water.
  • Dip the tomatoes in boiling water to loosen the skin, then peel them and cut them in to small pieces.
  • Peel and slice the onions and garlic.
  • Clean and slice the peppers and courgettes.
  • Put the olive oil into a frying pan, and gently fry the garlic and onions for 2 to 3 minutes on medium low heat.
  • Add the peppers and turn up the heat to medium.
  • Cook for five minutes, stirring all the time.
  • Add the courgette, stir and cook for five more minutes and then add the tomatoes.
  • Cover the pan, and simmer for about 15 minutes.
  • Add a teaspoon of sugar; salt and pepper to taste.
  • Turn up the heat and stir well.
  • If the pisto has too much liquid, let it boil away but keep stirring so that none of the ingredients stick to the bottom.

Steps:

  • Pour all Teriyaki sauce ingredients in a pan. Stir the mixture well.
  • Put the pan on low heat and simmer for a couple of minutes. Remove from the heat and cool the mixture.
  • Heat the oil in a frying pan or flat grill until very hot and stir-fry the first four vegetables for 2 minutes.
  • Add spring onions, bean sprouts, and mushrooms and stir-fry for 2 minutes.
  • Add remaining ingredients, seasonings, and Teriyaki Sauce and stir-fry for 1 minute.
