MOROCCAN COUSCOUS

Steps:

  • Melt the butter in a large saute pan, add the shallots and cook for 3 minutes over medium heat. Add the chicken stock, salt and pepper, raise the heat to high and bring the stock to a boil. Off the heat and add the couscous. Cover the pan and let it sit for 10 minutes.
  • Add the pignoli nuts and currants to the couscous, stir and serve.
  • Place the chickens, onions, carrots, celery, parsnips, parsley, thyme, dill, garlic, salt, and peppercorns in a 16 to 20-quart stockpot with 7 quarts of water and bring to a boil. Skim the surface as needed. Simmer uncovered for 4 hours. Strain the entire contents of the pot through a colander, discarding the chicken and vegetables, and chill. Discard the hardened fat, and then pack the broth in quart containers.

4 tablespoons (1/2 stick) unsalted butter
3/4 cup chopped shallots
3 cups Homemade Chicken Stock, recipe follows, or canned broth
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
1 1/2 cups couscous
1/2 cup pignoli nuts, toasted
1/4 cup currants
3 (5-pound) chickens
3 large onions, unpeeled and quartered
6 carrots, unpeeled and halved
4 celery stalks with leaves, cut in thirds
4 parsnips, unpeeled and cut in 1/2, optional
20 sprigs fresh flat-leaf parsley
15 sprigs fresh thyme
20 sprigs fresh dill
1 head garlic, unpeeled and cut in 1/2 crosswise
2 tablespoons kosher salt
2 teaspoons whole black peppercorns

Steps:

  • Dissolve chicken bouillon cubes in 2 ½ cups water in large saucepan.
  • Bring to a boil; add carrots and onion.
  • Cover and reduce heat to low.
  • Boil 15 minutes or until carrots are done.
  • Add salt, pepper, and couscous.
  • Cook, uncovered, 1 minute.
  • Add butter.
  • Cook and stir 2 minutes.
  • Cover and let stand 10 minutes.
  • Stir and serve.

VEGETABLE COUSCOUS PILAF

This Moroccan-style pilaf is loaded with vegetables and gets its complex flavors from cumin, almonds, caraway, and the multihued melange that comes from the tricolored couscous. We are always looking for something to take the place of rice and this seemed like a perfect candidate. This pilaf looks pretty too, with vibrant earth tones of a spice bazaar. Vegetable Couscous Pilaf image

Steps:

  • In a large, deep skillet, heat the olive oil.
  • Add the carrot and parsnip and cook over high heat, stirring frequently, until lightly browned and crisp-tender, about 5 minutes.
  • Add the yellow squash, zucchini, onion and garlic and season with salt and pepper.
  • Cook, stirring frequently, until the vegetables are lightly browned in spots, about 5 minutes.
  • Stir in the cumin, paprika and caraway seeds and cook, stirring, until fragrant.
  • Add the couscous and cook, stirring frequently, until lightly toasted, about 2 minutes.
  • Stir in the stock and apricots and season with salt and pepper.
  • Cover and let stand off the heat until the couscous is tender and the liquid is absorbed, about 5 minutes.
  • Fluff with a fork, stir in the almonds and cilantro and serve.
  • Serve with plain yogurt & a citrusy Sauvignon Blanc.

1 medium carrot, thinly sliced

Steps:

  • Place squash in a vegetable steaming basket over boiling water.
  • Cover and steam until tender, about 5 minutes.
  • Set aside.
  • Spray a large saucepan with cooking spray and set the pan over medium heat.
  • Add bell peppers and onions and cook, stirring, for 3 minutes.
  • Add all seasonings/spices and stir to coat the vegetables.
  • Add couscous and cook for 2 minutes.
  • Remove the pan from the heat.
  • Add boiling water to the pan.
  • Cover and set aside for 7 minutes to steam.
  • Fluff gently with a fork and add steamed squash, chickpeas and parsley.
  • Toss to mix, serve warm.

Moroccan Rice Pilaf image

Steps:

  • Preheat oven to 350°F.
  • Melt butter on medium-low heat in a small ovenproof pot.
  • Fold in onions and stir well.
  • Cook for 3-4 minutes until onions turn translucent but are not browned.
  • Add cumin, cayenne pepper, paprika and rice.
  • Stir well so that the rice is evenly coated with butter.
  • Cook for 3-4 minutes.
  • Stir in stock and raisins.
  • Bring to a boil on high heat.
  • Once the stock comes to a boil, cover the pot and let the pilaf cook in the oven for 18 minutes.
  • Fold in salt, pepper and almonds before fluffing with a fork and serving.
  • Enjoy!
