CHEESE AND FRUIT KABOBS
This is a 'how to' make your own gourmet fruit and cheese tray (along with the optional vegetable/cracker and port cheese spread). It can be pared down for a mini snack tray. The cheese followed by the fruit is a suggestion of a complimentary paring.

Steps:
- Alternate cubes of cheese and pieces of fruit on individual skewers. Arrange skewers on large platter along with an assortment of cut vegetables and crackers.
- A container of Port Wine cold pack cheese goes well with the assortment of vegetables and crackers.
- Small containers of smoked almonds and/or dried cranberries round off an appetizer try nicely.

SCALLOP AND BACON KABOBS
This recipe is wonderful served over rice with a salad and some bread. The sweetness of the scallops is perfect with the pineapple. Great summertime recipe. Marinating time is not included in prep and cook time.

Steps:
- Place the scallops, pineapple pieces, and vegetables in a large shallow container. Combine the remaining ingredients except the bacon. Stir well and pour the mixture over the scallops. Cover and refrigerate for 1 to 1 1/2 hours, stirring frequently.
- Cook the bacon until limp but not browned. Drain and set aside.
- Remove the scallops, pineapple and vegetables from the marinade, reserving the marinade. Alternate with the bacon on the skewers. (If using wooden skewers, soak in water for at least an hour).
- Grill the kabobs over hot coals for 10 to 12 minutes (basting frequently), or until the bacon is crisp. Turn and baste frequently with the marinade.
SHRIMP & SCALLOP KABOBS

Steps:
- Peel and devein shrimp.
- Drain pineapple chunks.
- (Use imported soy sauce if available for better taste. Use domestic if that is all that is available).
- In medium bowl, combine oil, lemon juice, soy sauce, garlic, ginger and onion powder; mix well.
- Add shrimp and scallops.
- Cover; refrigerate 3 hours or overnight.
- Place shrimp, scallops, pineapple and zucchini on bamboo skewers that have soaked 1 hour in water or on metal skewers.
- Grill or broil 3 to 6 minutes per side or until shrimp are pink, basting frequently with marinade.
- Refrigerate leftovers.

ORECCHIETTE WITH BROCCOLI RABE AND SPICY SAUSAGE
This pasta dish is from the Last Supper Club in San Francisco. Orecchiette means "little ears" and this pasta is sturdy enough to support the hearty sauce. If you are unable to find orecchiette you can use Farfalle.

Steps:
- Bring a large pot of water to a boil with the salt. Add the broccoli rabe and cook for 6 to 8 minutes, or until soft. Remove with a slotted spoon and set aside.
- Return the same pot of water to a boil, add the orecchiette and cook for 10 minutes, or until slightly undercooked. Drain, reserving the cooking water.
- Split the sausages lengthwise down the middle and remove from their casings.
- Heat the olive oil in a high-rimmed skillet over medium heat. Add the sausage meat, breaking it up as finely as possible. Add the broccoli and continue cooking and stirring until the broccoli breaks down to a saucelike texture.
- Add the chicken stock and orecchiette. Finish cooking the pasta in the sauce, being careful it doesn't stick. You may have to keep adding a little pasta water, additional stock or tap water until the pasta is soft yet chewy (al dente), making sure not to over-cook it.
- Finish the pasta by folding in the cheese, a few squeezes of lemon juice and the optional breadcrumbs.
