MOM'S CHEAP AND EASY GOULASH
My Mom used to make this for us all of the time. This is a quick, inexpensive and delicious one pot meal. She always served it with homemade garlic rolls, but I love to serve it with Recipe #256914.

GHASTLY GHOULASH
This rich Hungarian beef stew is a labor of love and well worth the effort. Stew beef, such as chuck, becomes super tender when cooked with plenty of red wine, diced tomatoes, vegetables, and herbs for about two hours. Serve alongside buttery noodles tossed with caraway seeds.

Steps:
- Toss beef with salt, pepper, and flour in a medium bowl. Heat 2 tablespoons oil in a large stockpot or Dutch oven over medium-high heat until hot. Brown half of beef on all sides, 4 to 6 minutes total. Transfer beef to a plate with a slotted spoon. Repeat with remaining beef and 2 tablespoons oil.
- Add onion to fat in pot; cook, stirring occasionally, until just tender, about 3 minutes. Stir in garlic; cook 1 minute. Add wine; cook, stirring up brown bits, until most liquid has evaporated, about 2 minutes.
- Return beef to pot. Stir in paprika, tomatoes, stock, tomato paste, and oregano. Season with salt and pepper. Cover; reduce heat. Gently simmer until meat is just tender, about 1 1/2 hours.
- Stir in carrots and potatoes; continue to simmer until vegetables and meat are very tender, 20 to 30 minutes.
- Meanwhile, cook bacon in a dry large skillet over medium heat until crisp, about 5 minutes. Transfer to paper towels to drain. Add mushrooms, pearl onions, and bell pepper to fat in skillet; cook until vegetables are tender and golden brown, and liquid has mostly evaporated. Add to goulash.
- Season goulash with salt and pepper, if necessary. Garnish with bacon pieces and oregano. Serve with caraway egg noodles.

MOUSTACHE GHOULASH ECONOMICAL AND TASTY
i may not eat meat any more but i used to and my husband still does so i make him and his meaty friends and my family this quite a lot. im a firm believer in getting meat from the butcher in my case the market that way you know its local you know its not been sprayed with presevative and you can ask for advice when buying it and where it has come from. I use beef shin as it is cheap tasty and not overlly fatty. i do cut out all gristley bits but leave in the little veins of fat for moisture, and yes this does take some time but i think its worth it. You could buy ready diced braising steak from the super market but you will get a lot more for your money from the butcher, for the record it cost about £4 for 3 thick slices of shin beef which is about 1.5Lbs of meat. however you get your meat though this will taste nice. i serve this with baked potatoes

- in a large casserole dish place the meat the garlic and cut up vegeatables.
- roughly break up plum tomatoes and tip into jug add the tomato paste oxo cubes, spices, water and vinger stirring well. tip this mix over the meat and veg in caseerole dish. if neccesaary add a little more water to bring the water level with top of meat and veg.
- cover with foil and bake for at least 1.5hrs. if you wnat to make this earlier in the day and cook it for longer lower the gas mark to 4/3 and inccrease time to 3-4 hours, check on it occiasonally to see if it needs more water.
- half an hour before serving remove foil and continue to cook uncovered. remove from oven and check consistentcy, if you would like to make it thicker add a couple of teaspoons of gravey granuales.
