- Preheat oven to 375°.
- Spray a 9 x 13 baking dish with nonstick spray.
- Season chicken breasts with garlic powder, salt and pepper and place in single layer in baking dish.
- In a large bowl, combine stuffing mix, corn, water and melted butter.
- Mix well and spoon over the chicken.
- Combine soup, milk and parsley and mix well.
- Pour over the stuffing, cover and bake for 35 minutes.
- Uncover and bake for 8 to 10 more minutes until stuffing is golden.

- Preheat the oven to 375 degrees. Cook the bacon in a large ovenproof skillet over medium heat until crisp, about 7 minutes; transfer to a paper-towel-lined plate. Add the onions to the pan with 1 teaspoon salt and some pepper; cook over low heat until tender, about 5 minutes, scraping up the browned bits with a wooden spoon. Set the skillet aside.
- Combine the cornbread, spinach, cheese, pecans, garlic, 1 tablespoon of the mustard, 1/2 teaspoon salt and the nutmeg in a medium bowl. Crumble in the bacon and toss gently. Stuff the mixture between the skin and flesh of each chicken half, making sure to cover the breast and thigh.
- Place the chicken halves skin-side up on top of the onions in the skillet. Combine the butter and honey in a bowl and brush all over the chicken; season with salt. Roast in the oven until a thermometer inserted in the thigh registers 165, about 50 minutes. Transfer the chicken to a cutting board; let rest for 10 minutes. Whisk the remaining 1 tablespoon mustard into the onion mixture and set aside. Carve each chicken half and serve on a platter with the onions.

- In large resealable food-storage plastic bag, mix buttermilk, dressing mix and chicken. Seal bag; turn bag several times to coat chicken. Refrigerate at least 1 hour or overnight.

- Preheat the oven to 400 degrees F (200 degrees C). Prepare a 1 1/2- to 2-quart casserole dish with cooking spray.
- Set aside 2 tablespoons of the cornbread mix and the white portions of the green onions for the filling.
- Prepare the cornbread topping: combine remaining cornbread mix with 1/2 cup water, Cheddar-Jack cheese, and green portions of green onions in a mixing bowl; stir to combine. Add additional water, 1 tablespoon at a time, until fully combined and a thick, spreadable batter forms. Set aside.
- Prepare the filling: heat a large nonstick pan over medium-high heat and add olive oil. Add chicken, carrots, mushrooms, bell pepper, onion, jalapeno, reserved white portions of green onions, Cajun seasoning, salt, and pepper. - Place chicken in a soup kettle. Add the water, celery and onion; bring to a boil. Reduce heat; cover and simmer for 1 to 1-1/2 hours or until chicken is tender. Remove chicken from broth. Strain broth, discarding vegetables; set broth aside. When cool enough to handle, remove chicken from bones; dice and place in a large bowl., In a large skillet, saute celery and onions in butter until tender; stir in salt, sage, pepper and cayenne. - Kristi's Old Fashion Chicken and Cornbread Dressing For the chicken: 1 large whole chicken (with gizzards, liver, neck) 2-3 quarts of water 1T salt 2 tsp.pepper 1/3 cup onion 1/3 cup celery TO PREPARE THE CHICKEN You need 1 large fryer (whole chicken or hen) Remove gizzards and livers inside chicken, and then wash in clear water. Place chicken, gizzards and livers in large pot with 2 to 3 quarts water; add salt, pepper, and 1/3 cup of each chopped onions and celery to the pot Cover the pot with enough water just above the chicken. Cook on high heat until pot start to boil. Reduce heat and continue boiling about 45 to 60 minutes or until almost done. The gizzards and livers will get done first. Remove them. Continue cooking until chicken is almost done; remove from pot. Set aside. Keep chicken broth. This is what makes the dressing moist and delicious. Celery & Onion Broth: 2 green onions, whites & green parts, chopped ¾ - 1 cup of each, chopped - celery and onions 1 stick of butter Enough water or chicken broth to cover the onions, celery Prepare Celery Onion Broth: In a small pot add stick of butter and enough water or broth to cover the celery and onion. Boil until tender, 10-15 minutes, set aside. CORNBREAD: 1 box Jiffy Mix prepared and baked according to the packaged instructions. 1 Bag Pepperidge Farm Sage Bread Crumbs 1 Bag Pepperidge Farm Country Bread Crumbs Salt and pepper to taste 1 to 2 tablespoons poultry seasoning, (to taste - use sparingly) 1 ½ - 2 tablespoons sage, (to taste - use sparingly) 1 cup + Broth to start 6 boiled eggs, chopped 4 eggs, slightly beaten 1 can cream of chicken soup Paprika MIX DRESSING In a large Bowl or well greased baking pan, crumble cornbread. Add salt, pepper, sage & country style bread crumbs, poultry seasoning, sage, cooked celery and onions, chopped boiled eggs and 4 beaten eggs, shredded boiled chicken, cream of chicken soup and mix well. Add a cup or so of broth to start; Mix well until dressing is the desired texture. If dressing seems dry, add more broth until dressing is the texture that you want. For a dryer mixture, use less broth, for a moist mixture, use more broth. Set aside or cover and keep in the refrigerator. FINAL PROCESS - Can be done the day of serving If the dressing looks dry, I poke holes all over the top, 2 knuckles deep and pour chicken broth over the top. Bake at 350°F Covered for 1 and 15 minutes. Remove the foil and continue to bake for 15 minutes longer or until it is done and the top of the dressing is crisp. Serve hot. Yield: 12 or more servings depending how much you serve yourself. NOTE: I use the large metal throw away pans when making this. I do not use glass bakeware. Cooking times will change according to the size baking dish you are using. IMPORTANT TIPS TO REMEMBER 1. When using poultry and sage seasoning, use according to your taste. You may want to add more seasonings or less, just be careful not to add too much-- it will overpower the natural flavors. Seasonings make or break the flavor in corn bread dressing. 2. Make the dressing a day before serving. This gives the seasonings time to spread flavor throughout. Just make sure you cover and store in the refrigerator until ready to use. 3. For more flavor, cut up chicken gizzards and/or livers in dressing before baking. 4. Reserve some broth for left over dressing. Store broth in the refrigerator.

CORNBREAD DRESSING WITH CHICKEN
Steps:
- Preheat oven at 450°F. Grease cast iron skillet or large pan (with Crisco shortening) spreading on bottom and sides (liberally). Pour cornbread mixture in greased skillet or pan. Bake about 30 minutes or until brown
- Pour water in large pan. Add margarine, salt & chicken. Cook chicken breast until tender, about 1 hour. Cut in pieces and set aside. Add chicken broth to liquid.
- In Large bowl-break cornbread in small pieces. Add hamburger bun pieces, onion, sage and black pepper, and celery. Pour liquid from chicken over cornbread mixture. Taste to see if more salt is needed. Add more water and chicken broth if cornbread mixture absorbs all of liquid. Mixture should have excess liquid before baking, as baking will make it thicker. Add chicken pieces. Stir (lightly) do not over stir.
- Pour into 11x13 pan. Bake about 1 hour or until brown.

This recipe was inspired by a Recipezaar thread where I requested Zaar Southerners to suggest their favorite Southern recipes. Talk about Southern hospitality -- what a response! I learned a lot -- I think I'm part Southerner now! About the stuffing: It does not call for broth, as the cornbread is on the moist side, even after toasting. I like a more crumbly stuffing, and find that the chicken exudes plenty of moisture to make it just right.

- Preheat oven to 350.
- Rinse chicken, remove excess fat from around the cavity and pat dry.
- Rub inside and outside of chicken with one teaspoon Old Bay seasoning and set aside.
- Spread corn bread pieces in a single layer on a baking sheet and toast in a 350 degree oven for about 15 minutes, or until they dry out a bit not much longer than that.
- Combine onion, celery, fresh herbs, pepper, olive oil and 1 teaspoon of the Old Bay seasoning in a mixing bowl.
- When the cornbread crumbs are toasted enough, dump the hot bread into the celery onion mixture and combine.
- Place the chicken in the bottom of a small roasting pan that has a cover.
- Stuff the cavity and the sides of the chicken with the stuffing you need to separate the skin a bit from the sides to get the stuffing in next to the leg/thigh pieces also stuff some into the neck cavity.
- Tie the legs together to hold the stuffing in with kitchen twine.
- Drizzle the chicken with oil, sprinkle with salt and a little more Old Bay if you like.
- Cover the pan and roast at 350 for about 1 and 1/2 hours, then uncover, insert a thermometer close to the leg/thigh joint without touching the bone- you're looking for it to read 180 degrees- it will be very close at this point.
- Roast a little longer uncovered until chicken is nicely browned and the thermometer reads 180 degrees.
- Allow the chicken to rest about 10 to 15 minutes before carving- this step keeps it juicy.
- Enjoy.

- Preheat the oven to 350 degrees F (175 degrees C).
- Cut a pocket into the side of each piece of chicken, going to within 1/2 inch of each edge. Season chicken pieces with salt and pepper; set aside.
- Melt the butter in a large saucepan over medium heat. Add the onion, bell pepper and chicken livers; cook and stir until onion is tender, about 5 minutes. Add the garlic and sage; cook and stir until fragrant, about 1 minute more. Pour in the chicken broth and season with salt and pepper. Bring to a boil, then remove from the heat.
