Fried Plantains image

Steps:

  • Combine water, garlic and salt in medium size glass bowl and set aside.
  • In a large (12-inch) saute pan, heat oil to 325 degrees F. Peel plantains and slice crosswise into 1-inch pieces. Carefully add plantains to oil and fry until golden yellow in color, about 1 to 1 1/2 minutes per side. (The oil should come halfway up the side of the plantain). With a spider or slotted spoon, remove the plantains from the pan and place them on a cookie sheet lined with parchment paper, standing them on their ends. With the back of a wide, wooden spatula, press each piece of plantain down to half its original size. Then place the plantains in the water and let soak for 1 minute. Remove and pat dry with a tea towel to remove excess water.
  • Bring oil back up to 325 degrees F and return plantains to pan and cook until golden brown, approximately 2 to 4 minutes per side. Remove to a dish lined with paper towels, and sprinkle with salt, if desired. Serve immediately.

This is a simple yet delicious way I like to make plantains. The taste is wonderful, and it makes either a great appetizer or dessert. It is an excellent accompaniment to many Central and South American bean and meat dishes.

My Favorite Fried Plantains image

Steps:

  • Peel plantains and cut in half. Then, slice the halves lengthwise into 1/4 inch strips so that you have about eight slices per plantain each about four inches long.
  • Heat half the Grape Seed Oil in a large cast iron or non-stick frying pan on medium high heat, and add half of your plantain slices.
  • Fry the plantain slices till they turn slightly golden yellow and get crispy. Don't overcook and turn them brown. Remove the plantains from the frying pan and put on a serving plate.
  • Repeat with the 2nd half of the oil and plantains. When these are cooked, add to your serving plate.
  • Using a butter knife, spread your raw honey lightly on the fried plantain slices and sprinkle with the coconut flakes.
  • Serve warm. Squeeze the limes over the fried plantains, and serve with yogurt for dipping.

  • Peel and slice plantains into 1/2-1 inch rounds at a slight angle. Since plantains have a thick skin, you will need to slice through the skin with a knife to peel them. Just be careful not to cut through the plantain.
  • Heat a large nonstick sauté pan over medium-low heat, add ghee and let it get hot, about 30 seconds. Next, add plantains, spreading out evenly in the pan and allowing some room between them. You may need to make them in two batches depending on how big your pan is.
  • Sauté for 4-6 minutes, flipping once halfway through, until tender and golden brown and caramelized. Sprinkle with lots of sea salt and enjoy!⁠
