Mejillones Con Salsa Picante (Mussels in Spicy Sauce) image

Steps:

  • Peel and chop the onion and put it to soften in a pan with a little oil. Chop the green pepper and add it.
  • Add a little salt and a little sugar (to the same extent), to remove the acidity.
  • When they start to turn brown, chop the tomatoes and incorporate along with the two cayenne peppers.
  • Cook over medium heat for 20-25 minutes.
  • Blend with an electric mixer and set aside.
  • Clean the mussels.
  • Place in a pan, pour a glass of white wine, cover and cook until they open.
  • Once opened, remove the mussels to a platter and keep warm.
  • Strain the stock through a cheese cloth.
  • Reserve the broth.
  • Remove empty mussels and reserve the other mussels.
  • Peel and rolled the garlic cloves and put them to fry in a pan with a little oil.
  • Add a tablespoon of flour and cooking.
  • Pour a glass of mussel broth and tomato sauce.
  • Mix and incorporates the mussels.
  • Cook over low heat for 3-4 minutes.
  • Serve in bowls and garnish with a sprig of parsley.

Steps:

  • Chop in processor on Pulse, slow.
  • Chop onion first and tomatoes last.
  • Add spices, juice.
  • Be careful not to over-process.
  • Drain to get excess water out.
  • Serve alone with chips or as a condiment.

3 -4 large ripe tomatoes, seeded (squeezed)
2 -3 cloves garlic (fresh, crushed)
1 medium sweet onion, to taste
1/2 cup cilantro, to taste
1 jalapeno, to taste
1 tomatillo (if available)
3 -5 dashes ground cumin
3 -5 dashes cajun seasoning
3 -5 dashes hot sauce
1 tablespoon fresh lime juice (a must!)

Mussels with Spicy Tomato-Chili Sauce image

Steps:

  • Heat oil in heavy large pot over medium-high heat. Add onion; sauté 5 minutes. Mix in tomato paste, black bean sauce and jalapeños, then tomatoes and fish stock. Bring to boil. Add mussels. Cover and cook until mussels open, about 6 minutes (discard any mussels that do not open). Ladle mussels and tomato mixture into bowls and serve.

Mussels in Green Sauce Madrid (Mejillones En Salsa Verde Madrid) image

Steps:

  • Scrub the mussels under the faucet and remove the beards, and then set aside.
  • In a 6 quart saucepot place butter, flour, wine, lemon juice and clam juice and bring to a boil over high heat. Add the mussels and return to a boil. Reduce heat to low and simmer covered 3 minutes or until mussels are opened. With a slotted spoon remove mussels to 2 or 4 deep serving bowls or dishes and set aside.
  • Place the liquid into a blender or food processor and add the parsley, garlic cloves, shallot, salt and pepper and blend well. Pour the sauce over the mussels and serve with a French or Italian bread to sop up the wonderful sauce.

Stuffed Mussels in Spicy Tomato Sauce image

Steps:

  • Beard and clean mussels.
  • Open mussels over bowl to collect liquid. Set aside.
  • Cut stale bread up into cubes, place in bowl and moisten with broth. Let stand till bread has softened.
  • Squeeze bread well of all liquid. Mix all the stuffing ingredients well in a bowl.
  • Stuff mussels placing a heaping tablespoon of the stuffing on an open shell, press the two shells shut and wipe off the stuffing that squishes out.
  • Make the tomato sauce: Sauté garlic, chili pepper and parsley in the oil over medium heat (do not let garlic brown). Add the crushed peeled tomatoes, stir and then add the mussel juice you've kept aside. Let sauce simmer for about 15 minutes.
  • Gently place mussels into pan, cover and let mussels stew for about half an hour or until stuffing has cooked through.
  • Serve and garnish with a sprinkling of parsley.
