MY FAVORITE SNOWFLAKE ROLLS
These are my favorite rolls. A snow flake roll is a light and airy roll that has a slight chew to it. Melt some butter in the middle of these warm. They are so good. My daughter and I could consume 3-4 at a meal. Quick to make for a yeast roll. I used to buy these at a local bakery until I discovered how easy they were to make....

Steps:
- 1. Heat water,milk,and butter in a saucepan until warm (not hot). keep on warm. Get a large bowl and combine 1 1/2 cups of flour,salt,yeast,and sugar. Mix them all together really well.
- 2. add the warm butter mixture to the flour mixture.Get your hand held mixer and mix on medium for a couple of minutes,then gradually add more of the remaining 2 cups of flour a little at a time. Keep adding the flour until you get a soft dough to handle by adding a little flour at a time and mixing well.
- 3. Once your dough is easy to handle. Put on a floured surface,and knead for 5-7 minutes. Put in a greased bowl.turn to get the dough greased all the way around.Cover and let rise in a warm place for 15 minutes.
- 4. Take dough and put on floured board. Cut the dough in to equal size pieces. Shape in to rolls by rolling them with hand on floured surface..
- 5. Place the rolls in( 2 )- 9 inch square pans.Let rise for another 20 minutes,or until puffed up.Dust the tops of rolls with flour. Then bake at 425 degree's for 15 minutes or until light brown.

Simple dinner rolls that are easy to make. Dough is also a great base for cinnamon rolls.

- In a medium saucepan over medium heat, warm milk, water, sugar and salt. Remove from heat, and mix in the eggs and yeast.
- Measure flour into a large bowl. Make a well in the flour, and pour milk mixture into it. Do not stir. Cover with a lid, and let stand for 20 to 30 minutes.
- Pour melted margarine into flour, and mix well. Add more flour if too sticky. Knead lightly. Cover, and let rise for 20 to 30 minutes.
- Shape the dough into rolls, and place on a baking sheet. Let rise again for 20 to 30 minutes.
- Bake rolls in a preheated 400 degrees F (205 degrees C) oven for 15 minutes, or until done.

MY FAVORITE ROLLS
A nice yeasty roll made from scratch. This has been my contribution to holiday dinners for friends and family for a number of years. Hope you enjoy them as much as I do ! I use a stand mixer starting with the paddle for liquid, when it starts to get thick, switch to your dough hook.

- Preheat oven 350 degrees.
- In your mixing bowl, add warm water and yeast, stirring to dissolve.
- Add butter, egg and part of the sugar, mixing well.
- Mix 1/2 of the flour with powdered milk, salt and the rest of the sugar.
- Add to yeast mixture and mix well.
- Add rest of flour as needed until dough is no longer sticky, but not too dry.
- Cover bowl with flour sack towel, place in a warm spot and let rise until doubled.
- Punch down.
- Lightly flour countertop, pull off pieces of dough, making them into a round shape a little larger than a golf ball.
- Place 1" apart in greased pan.
- Cover and let rise until doubled.
- Spray tops with butter flavored spray.
- Bake 10 minutes, turning pan and baking another 8 minutes.
- Rolls are done when you can thump them with your finger and they sound hollow !

- Whisk the warm milk, yeast, and 1 Tablespoon of sugar together in the bowl of your stand mixer. Cover and allow to sit for 5 minutes. *If you do not own a stand mixer, you can do this in a large mixing bowl and in the next step, mix the dough together with a large wooden spoon/rubber spatula. It will take a bit of arm muscle. A hand mixer works, but the sticky dough repeatedly gets stuck in the beaters. Mixing by hand with a wooden spoon or rubber spatula is a better choice.*
- Add the remaining sugar, egg, butter, salt, and 1 cup flour. With a dough hook or paddle attachment, mix/beat on low speed for 30 seconds, scrape down the sides of the bowl with a rubber spatula, then add the remaining flour. Beat on medium speed until the dough comes together and pulls away from the sides of the bowl, about 2 minutes. If the dough seems too wet to a point where kneading (next step) would be impossible, beat in more flour 1 Tablespoon at a time until you have a workable dough, similar to the photos and video above. Dough should be soft and a little sticky, but still manageable to knead with lightly floured hands.
- Keep the dough in the mixer and beat for an additional 2 minutes or knead by hand on a lightly floured surface for 2 minutes. (See video tutorial above if you need a visual of kneading dough by hand.)
- Lightly grease a large bowl with oil or nonstick spray. Place the dough in the bowl, turning it to coat all sides in the oil. Cover the bowl with aluminum foil, plastic wrap, or a clean kitchen towel. Allow the dough to rise in a relatively warm environment for 1-2 hours or until double in size.
