NANA'S PEACH PARFAIT PIE
This peach parfait pie has always been a family favorite and is great on a warm summer day!

Steps:
- Preheat the oven to 325 degrees F (165 degrees C). Spread oats on a cookie sheet.
- Toast in the preheated oven for 5 minutes. Add almonds to the oats and continue to toast for 5 minutes more. Remove from the oven and transfer to a bowl.
- Stir brown sugar and melted butter into the oat mixture. Press mixture onto the bottom and sides of a 9-inch pie pan. Chill while preparing filling.
- Bring orange juice to a boil in a saucepan. Remove from heat. Sprinkle in gelatin slowly while stirring with a whisk until fully dissolved. Add ice cream and stir until melted and mixture is smooth. Fold in peaches and add almond extract. Pour into the chilled crust. Chill for at least 3 hours before serving.

BERRY 'NANA OATMEAL PARFAIT

Steps:
- Combine all ingredients for oatmeal in a small nonstick pot on the stove. Add 3/4 cup of water and mix well. Bring to a boil over medium-high heat, and then reduce to a simmer. Cook for about 9 minutes, stirring often, until somewhat thick and creamy. (It will thicken more upon chilling.) Remove from heat and allow to slightly cool. Transfer to a bowl, cover, and refrigerate until chilled, at least 1 1/2 hours.
- Stir oatmeal thoroughly until uniform in texture. Spoon half of the oatmeal into a pint glass, and top with 1/4 cup of sliced strawberries, 1/4 cup of yogurt, and half of the banana slices. Repeat with the remaining oatmeal, strawberries, yogurt, and banana.
- Serve and enjoy!

- Place peaches in a bowl; sprinkle with sugar. Let stand for 15 minutes. Drain, reserving juice in a 1-cup measuring cup. Set peaches aside., Add enough water to the juice to measure 1 cup; pour into a small saucepan. Bring to a boil. Remove from the heat. , Stir in gelatin until dissolved; add cold water. Gradually add the ice cream, 1/2 cup at a time, stirring after each addition until blended. Cover and refrigerate for 60-75 minutes or until slightly thickened, stirring occasionally (mixture may separate)., Drain peaches again; discard juice. Fold gelatin mixture into peaches. Transfer to pastry shell. Cover and refrigerate for 3 hours or until firm. Just before serving, garnish with whipped cream.

NEARLY NANA'S SPINACH & FETA PIE
My Nana makes great a Spanakopita, but refuses to show me how to make it because I don't visit enough. It has taken me years of practice but now my father thinks mine is better than his mother's--don't tell Nana.

Steps:
- Cook frozen spinach in microwave on HIGH for 7 minutes. Allow to cool slightly and squeeze out excess liquid from spinach and use a fork to loosen leaves apart into a large mixing bowl.
- Add remaining filling ingredients, mix with fork. (Don't over mix, only until just combined and this will make it light and fluffy). Moisten edges of pastry with some of the beaten egg.
- Divide filling evenly in the centre of the 3 pieces of puff pastry, leaving enough room on the pastry to roll and seal pastry into a log.
- Seal all edges and brush top of pastry with the remaining beaten egg.
- Space all 3 logs on top a lined baking tray and bake in a moderate oven until pastry is golden.
NANA'S PECAN PIE
Steps:
- Combine all ingredients together into a medium sauce pan, medium heat. Heat just enough to melt all ingredients.
- Then pour into your un-baked pie shells.
- Bake at 425* for 10 minutes, then reduce heat to 325* for 40 minutes. Each oven temperature varies. Place on cooling rack for 30 minutes.

- TO PREPARE CRUST:Heat oven to 400°F. In 9-inch pie pan, combine cookie and cracker crumbs with allspice. Stir in margarine and yogurt. Pat into bottom and up sides of pie pan. Bake 8 to 10 minutes or until browned remove and cool on rack.TO PREPARE FILLING:Meanwhile, combine gelatin mix with 1 cup boiling water, stirring until dissolved. Add 3/4 cup cold water and reserved peach juice to gelatin mixture. Refrigerate 1 hour or until slightly thickened. Meanwhile, reserve 8 peach slices for garnish chop remaining peaches and set aside.
