NANNIE RUBY'S DAGO BREAD
My mother-in-law showed me how to make this bread before her son and I were married. She learned it from her mother-in-law who was an immigrant from Sicily. Our family tradition is to have this bread on Christmas Eve. We take a slice of bread and put olive oil, salt and pepper on it and eat it. We also cook homemade Italian sausage and wrap it in a slice of Nannie's bread.

Steps:
- Mix flour, yeast and salt.
- Dissolve honey in one cup warm water.
- Add two cups warm water and olive oil to honey mixture.
- Add liquid to dry ingredients and mix by hand or KitchenAid mixer using dough hook.
- Knead dough about 5 minutes. Place in bowl with a little olive oil in the bottom. Turn dough to coat with oil. Place in warm, draft free area to rise(about 50 min).
- Take dough out of bowl and knead a second time about 2 min on a floured surface. Place back in bowl, turning dough to coat with oil. Let rise a second time(about 30 min).
- Knead third time - gently about 2 minute
- Divide dough into four parts. Smear butter on work surface. Knead each dough ball with fingertips on buttered surface. Each ball of dough should be rolled up like a jellyroll. I add butter to the work surface as needed.
- Place dough into greased pans. We use PAM to grease the pans.
- Let dough rise again about 30 minutes. I always cover the loaves with a dish cloth while they rise.
- Bake at 350 degrees for 20 minute Lower to 300 degrees and bake 10 minute longer.
- Brush tops of loaves with slightly beaten egg whites.
SUPER EASY (SPECKLE) TROUT
My mother-in-law showed me this recipe - so easy my kids could make it! I have kept this very general as it really depends on the size of the trout you have, and your personal preference when it comes to the lemon. We catch speckle trout (all about 10 - 12 inches long); So tasty and sweet! Best with FRESH fish!! This could be served at camp too! Just bring the whole lemons and butter (ooh, even a few cloves of previously roasted garlic!)

PORK ASADO
This recipe is a bit different from the Chinese variation. My Mother in Law taught me how to make this dish which was handed down from her Mother in Law and my husband requests it often. It's one of those comforting dishes that will become a staple.

Steps:
- Cut the pork into 1/2 inch cubes removing any fat. Heat a large pot on medium high and fry the pork allowing it to fry in its own juices. After the meat is browned on all sides, turn the heat to medium low and cover stirring occasional until the meat is fork tender, about 45 minutes.
- Then, add the flour to the pork and stir lightly browning the flour for 2 minutes. Finally, add the tomato sauce, all of the spices and water. Stir to combine and cook on medium heat just until the sauce thickens. Add more garlic salt to taste and chile powder if needed. Also, if sauce gets too thick, you can add another 1/4 cup water until the sauce has the consistency you like. It should resemble a runny gravy.

KHAI LUK KOEI (SON-IN-LAW EGGS)
Once upon a time in Thailand, a Son-in-Law wanted to impress his mother-in-law, so he created these eggs. These Deep-Fried, Hard-boiled eggs sauced with an almost saffron-colored combination are absolutely unique, Wonderful to taste, and perfectly beautiful on a plate. Be careful when frying them. Use a splatter screen to avoid the hot oil that sputters up when the eggs are added, and a metal spatula and wooden chopsticks to turn them in the oil-they have a tendency to stick. This recipe is from the book The Best of Thailand.

My mother in law lived in the city while my father in law was in the war. She did not have a lot of money, so a little French lady taught her to make this spaghetti. She passed it down to all of our familes as we all loved it--hope you do too.
