Steps:
- In large saucepan bring to a boil sugar and water.
- Boil for 10 minutes then cool completely.
- Add next 4 ingredients.
- Place 2 scoops vanilla ice cream in tall glass.
- Pour approximately 1/2 cup nectar syrup over ice cream.
- Fill remainder of the glass with chilled sparkling water.
- Refrigerate unused nectar.

NECTAR SYRUP II. 3 cups granulated sugar. 1-1/2 cups water. 1 tablespoon of vanilla extract. 2 tablespoon almond extract. 1/2 teaspoon red food coloring.
