Steps:

  • For the crust: In a large mixing bowl stir together flour, sugar and salt. Cut in the butter and shortening with a pastry cutter or a fork until the mixture resembles coarse crumbs. Work in the ice water 1 tablespoon at a time. If it still does not come together add more ice water as needed. Wrap the pie dough, tightly, in plastic wrap and chill for at least 30 minutes.
  • Roll the dough out on a floured surface to a 10-inch circle. Transfer the dough to a pie plate and press it down into the bottom and sides. Fold the edges under and flute them or crimp them with a fork.
  • For the filling: Preheat oven to 375 degrees F.
  • In a mixing bowl cut together flour, sugar, brown sugar, shortening and butter until it resembles coarse crumbs; set aside. In another mixing bowl whisk together egg, molasses, hot water and baking soda. Pour the egg mixture into the pie shell. Sprinkle the crumbs on top. Bake for 30 to 35 minutes. The center of the pie may still quiver a bit when jiggled; it will firm up a bit more as it cools.

1/3 cup sugar
1/3 cup dark brown sugar
1 tablespoon vegetable shortening

AUTHENTIC SHOO FLY PIE (STRAIGHT FROM LANCASTER CO.)

Born, raised & still residing in Lancaster County Amish/PA Dutch Country this is as authentic as it gets. This recipe is from the Mennonite Community Cookbook that's older than me & given to me by my mother. I saw a few other versions posted, but none were like this one. You could use 9 inch pre-pared pie crust but for the real deal you may want to start from scratch (see my recipe #163245 for the crust that goes with).

  • Optional: place pie crust in pie dish and par-bake for 10-12 minutes. Remove from oven and let cool.
  • In a large bowl, whisk together molasses and hot water, then stir in baking soda and salt. Let cool slightly, then, while stirring continuously, whisk in lightly beaten egg. (If mixture is too hot, egg could curdle when added.) Pour mixture into cooled crust.
  • In another large bowl, whisk together flour, brown sugar and cinnamon, then cut in cold butter until mixture is coarse and has the consistency of small pebbles. Sprinkle topping over filling; you might not be able to see filling since there’s a fair amount of topping, which is okay.
