The Cheesiest Quesadillas image

Steps:

  • Roast the chiles by using metal tongs to hold them one-by-one over the flame of your stovetop until the skin is totally charred. (If you don't have a gas stove, you can use an outdoor grill OR place them on a baking sheet directly under your oven's broiler.) When totally blackened, place the chiles in a large resealable plastic bag and seal the bag to allow them to sweat for a good 20 minutes. Then use a knife to scrape off most of the blackened skin. Stem, seed and finely mince the chiles.
  • Butter a large cast-iron skillet generously and set over medium heat. Put 1 tortilla in the skillet and sprinkle on a third of the Monterey Jack and pepper jack cheese, evenly spreading it all the way to the edges so that the surface will be totally covered. Sprinkle on a third of the roasted chiles. Wait for the cheese to mostly melt, then fold half of the tortilla over itself. Cook for 20 more seconds, then flip the half-moon over and cook until the tortilla is buttery and golden, for 30 more seconds. Keep warm and repeat with the remaining tortillas, cheese and chiles. Cut into 4 or 5 wedges each and serve with bowls of chili.

Your Basic Quesadilla image

Steps:

  • In a pan skillet large enough to hold one of the tortillas flat, melt ½ of the butter.
  • Fry one side of one of the tortillas, then remove it from the pan.
  • Put the rest of the butter in the pan, then put the unfried tortilla in to cook.
  • Immediately sprinkle the cheese on top of the tortilla in the pan, then top with the previously fried tortilla, browned side up.
  • Press them together with a spatula and fry the quesadilla until the cheese is melted.
  • Remove it from the pan and cut in wedges like a pizza.
  • Top with sour cream and/or salsa.
  • Enjoy!

Only 3 ingredients but my youngest DS loves it! Like the name says, it is very basic and is also very low maintenance. I would saute meat and/or veggies and have nonfat sour cream, salsa or guacamole to dip it in, but this is the basic-est version of the quesadilla. You can also use this as an appetizer and cut into thinner wedges. My DS can eat the whole thing now for dinner, but I thought I would list 2 servings. Enjoy!

Nif's Very Basic Cheese Quesadillas image

Steps:

  • Place one tortilla in a nonstick pan and set on stove with the burner off. Sprinkle with cheddar cheese and taco seasoning.
  • Turn heat to medium and place other tortilla on top. After about 5 minutes, gently lift edge of quesadilla to see if bottom tortilla is starting to brown. It should take a little longer, but keep a close eye on it. When it is a light golden colour, slide quesadilla on to a plate.
  • Flip quesadilla into the pan and brown other side, checking frequently. Slide on to a cutting board. Let sit for a couple of minutes and then cut into quarters.

1 1/2 cups low-fat cheddar cheese, grated
2 (10 inch) flour tortillas, soft (I use whole wheat)
low-sodium taco seasoning, to taste

  • Heat a skillet over medium heat, and add 1/2 teaspoon oil. When oil is hot, place 1 tortilla in pan; sprinkle with 1/4 cup grated cheese, 1/4 cup filling, if using, and another 1/4 cup grated cheese. Top with second tortilla, and cook until cheese is melting and the bottom of tortilla is golden brown. Flip, and cook until golden on both sides, the cheese is melted, and the filling hot.

Nif's Egg, Ham and Cheese Breakfast Quesadillas image

Steps:

  • Over medium-low heat, heat ham in a nonstick frying pan sprayed with nontick spray. While ham is warming, whisk together the egg and egg substitute. Add to ham and stir until eggs are just barely cooked. Salt and pepper to taste.
  • Place one tortilla in another frying pan, over medium heat. Sprinkle with half of the cheddar and half the ham and egg mixture. Top with half of the mozzarella. Place second tortilla on top.
  • Gently lift the tortilla to see when it is lightly browned. When it is, slide quesadilla onto a plate. Place pan on top of plate and flip so that the uncooked side is now on the bottom. Cook until lightly browned. Slide onto a cutting board and cut into 6 slices.
  • Repeat to make another quesadilla.

  • In a small saucepan, melt butter over medium heat. Add flour and whisk very frequently for at least 2 minutes or until bubbly.
  • Whisk in milk and heat until thickened, about 2 minutes.
  • Remove from heat and immediately whisk in cheese and paprika until melted and smooth.
  • Add salt and cayenne pepper to your taste.
