SIMPLE FLOURLESS APPLE CRISP
I made this quick and easy, flourless apple crisp to cut out some carbs. I've found that 2 Macintosh and 2 Granny Smith apples work best.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Arrange apple slices in 9-inch circular glass pie plate.
- Stir oats, brown sugar, and ground cinnamon together in a bowl.
- Microwave butter in short 5-second increments until melted, about 20 seconds. Stir honey, melted butter, and oil into oat mixture; crumble over apples.
- Bake in preheated oven until golden brown, about 35 minutes. Cool on a wire cooling rack, about 45 minutes.

- Mix together flour, 1 cup sugar, baking powder, and egg. The mixture will look like cornmeal.
- Peel, core, and slice the apples. Mix together with 1/2 tablespoon cinnamon. Place apples in a greased 8 inch square pan. Spread flour mixture over the apples. Mix together 1 tablespoon cinnamon and 1/4 cup sugar; sprinkle over the top of the crisp. Drizzle with butter or margarine.
- Bake at 300 degrees F (150 degrees C) for one hour. Serve warm.

SHEILA'S BEST APPLE CRISP (NO OATS)
This is the apple crisp from my childhood (there is no oatmeal in the topping). If I could only pick one dessert to make the rest of my life, this would probably be it. Mom always made this in her beautiful copper au gratin pan. I bought the same pan when I got married, just so I could make this dessert. Originally from the 1966 version of the "Woman's Day Encyclopedia of Cookery", Mom adapted it slightly over the years (with a little help from Cooks Illustrated I think). Cutting the apples into "cubes" (instead of slices) helps the apples keep the apples firm throughout. I have made this with pecans or walnuts. I have also made it without nuts. I like it best with pecans, but all versions are yummy!! I love it warm or cold. You can serve it with ice cream, but I usually only do that for dinner parties.

Steps:
- Cut cold butter into small cubes. Place in freezer to chill further.
- PREPARE APPLES.
- Peel apples.
- Cut an apple into quarters. Cut out core. Cut each apple slice one more time so that there are 8 slices.
- Cube the apple by cutting each slice the "short" way 2 or 3 times. Apple chunks should be no smaller than 1 inch (or they will get too mushy when cooking).
- Cube the remaining apples.
- Put apples into an 8 1/2 x 12 inch au gratin casserole dish, or an equivalent baking dish (it's pretty forgiving).
- Pour water over apples.
- PREPARE TOPPING:.
- In the food processor put the sugar, nutmeg, cinnamon, salt and flour. Pulse until combined.
- Remove butter from freezer and put into food processor.
- Pulse to blend. Topping should be smaller than peas but not as fine as cornmeal.
- Add 3/4 cups chopped pecans pulse too mix.
- Sprinkle topping over apples evenly.
- Cover dish with foil.
- Bake at 350 for 30 minutes.
- Uncover.
- Bake for 30 more minutes.
- Cool before serving.
NO-BAKE APPLE CRISP
My super easy and fast apple crisp made in a skillet! To make it a little healthier just skip the butter, put a little water in the pan with the apples, cover and steam.

- 1. Clean & chop apple into chunks. (I usually quarter the apple, then slice the quarters into 1/2" bites.).
- 2. Place apple chunks in a small bowl. Sprinkle with cinnamon and cloves, or allspice. Stir to distribute spices.
- 3. You may drizzle honey or agave over the apples if desired. Stir. (It helps the oats & nuts to stick a little better, but I've made it without before and it's fine.)
- 4. Add in raisins, dates (and/or whatever dried fruit you may like), and nuts. The above quantities are just a guess, I usually just use a handful of raisins & nuts.
- 5. Stir & enjoy.
VEGAN APPLE CRISP (NO MARGARINE)
At Christmas, my mom ALWAYS baked an apple crisp in her deep glass pie dish, and we unashamedly scarfed it down. The apples made it healthy, sure, but what about all the hard fat? When we went vegan and couldn't buy a dairy-free margarine, that was a dilemma. Thankfully, we don't have to resort to Crisco. We found and modified this recipe on Vegweb, and now our holiday apple crisp is every bit as sinfully sweet, appley and crispy as it ever was.

- First of all, feel free to use any type or combination of apples. If you are using a very firm variety- granny smith for instance- it is a good idea to cook them for a couple of minutes, with as little water water as possible, just to warm and slightly soften them. Otherwise they will stay rather firm instead of half-melting as they bake.
- Preheat oven to 350.
- Mix the other ingredients, with a spoon, then with fingers, until the texture is crumbly. If too dry, add more oil or soymilk; if too wet, add more flour.
- Transfer the apples to a medium casserole or pie dish. Sprinkle the dry mixture over them and even it out a bit with a spoon.
- Bake for 1/2 hour, checking occasionally, till the "crisp" is golden and crispy! Allow to cool a little before devouring with a scoop of vanilla ice cream -- enjoy!
