NO-BAKE ENERGY BITES
This is a healthy take on the traditional no bake cookies. So good and good for you! I am always asked for this recipe every time I make them. They are a hit with the kids and the adults, and always go quick! I store them in the freezer because I think they taste best frozen, but not necessary.

NO-BAKE EASY ENERGY BARS
Designed for hiking and backpacking trips, these bars are high in protein and clean carbs, do not require refrigeration, and travel very well in the pack. I recommend using non-pasteurized (living) honey, natural peanut butter with as little additives as possible, and quick oats.

- Place the almonds in a food processor and blend into a coarse, grainy flour. If a few larger chunks are left behind, that’s totally fine.
- Add everything except the dates and chocolate chip and mix until broken down into a grainy consistency,
- Add the dates and process until it forms a thick, sticky dough. If the mixture is not sticking together, add 1 tbsp of warm water and process again.
- Line an approximately 7 x 7 inch square baking pan with two strips of parchment paper so they stick out the sides of the pan. Tightly press the dough into the pan. You can wet your fingers and use them to smooth the bars out.

- Place all of the ingredients in a large mixing bowl: oats, power mix-ins, nut butter, sweetener, vanilla extract, salt, mix-ins, and any other spices you'd like to add. Stir to combine. If the mixture seems too wet, add a bit more oats. If it's too dry, add a bit more nut butter. It should resemble a somewhat sticky dough that holds together when lightly squeezed. Place the bowl in the refrigerator for 30 minutes to set (this will make the balls easier to roll later on).
- Remove the bowl from the refrigerator and portion the dough into balls of desired size. (I use a cookie scoop to make mine approximately 1 inch in diameter). Enjoy!
