PUFFED CARAMEL CORN

Puffed corn can be found in the potato chip aisle of your grocery store. This is a great caramel corn without hulls or unpopped kernels. Warning: you need to make a double batch of this because it doesn't last long, at least not in my house. Very addicting. Love it!

Puffed Caramel Corn image

Steps:

  • Preheat oven to 250 degrees F (120 degrees C).
  • Combine corn puffs and peanuts in a large roasting pan.
  • Bring butter, brown sugar, and corn syrup to a boil in a heavy 2-quart saucepan. Cook and stir for 2 minutes. Remove from heat; stir in baking soda until mixture foams up. Pour over corn-peanut mixture and toss well using rubber spatulas.
  • Bake in the preheated oven, stirring every 10 to 15 minutes, until a cooled piece of corn is crunchy, about 45 minutes.
  • Spread on waxed paper to cool. Break apart and transfer to an airtight container.

Steps:

  • Heat brown sugar, butter, and syrup on the stove and bring to a boil.
  • Boil for 2 minutes and remove from heat.
  • Stir in the baking soda and vanilla and dissolve.
  • In a separate large bowl mix the puff corn and the stove mixture.
  • Pour on a large cookie sheet.
  • Put in a 250 degree oven for 10 minute.
  • Stir it and bake for another 10 minute.
  • Stir one more time and bake for another 10 minute.
  • Pour it onto wax paper and let it cool.
  • Pull apart if needed and enjoy!

Steps:

  • Place puff corn in a large roaster pan.
  • In 2 quart sauce pan bring the butter, sugar & corn syrup to bring to boil, then cook for 2 minutes.
  • Add the baking soda- this will cause the caramel mixture to foam up.
  • Stir well and remove from heat.
  • Pour over puff corn in roaster and bake in 250* oven for 45 minutes, stirring every 10-15 minutes.
  • Remove from oven, spread out onto wax paper to cool.

Steps:

  • Mix butter, corn syrup, and brown sugar in saucepan. Cook on low-med heat for 2 min or until bubbly around edges, remove from heat. Add 1t baking soda to cause foaming (helps coat them better). Pour caramel slurry over corn pops and stir until pops are properly coated. Place in 250 degree oven for approx 45 min, stirring every 10 minute Remove from oven and pour onto waxed paper. Caramel Popcorn (not too sweet or sticky) image

Steps:

  • Prepare microwave popcorn as directed on bag.
  • Remove any unpopped kernels.
  • In 2 quart microwave-safe bowl, microwave butter on high until melted, about 1& 1/2 minutes.
  • Stir in sugar and corn syrup, and microwave on high for 4-5 minutes.
  • Stir in vanilla and baking soda until blended.
  • Stir in popcorn, mixing well.
  • (It may be a bit tricky to mix the popcorn in at first, but the more you stir, the easier it gets.) If you are using nuts, add them here too.
  • Microwave on high for 4 to 6 minutes, stirring every 2 minutes to coat popcorn evenly.
  • Transfer caramel corn to tray lined with waxed paper, or parchment paper.
  • Cool and break popcorn apart.
  • Store in airtight container.

1 (3 1/2 ounce) bag microwave popcorn or 2 quarts plain popped popcorn

  • Spray a large roasting pan or two 9x13 pans with cooking spray. Divide puff corn up between two dishes.
  • In medium sauce pot, combine butter, brown sugar, and corn syrup (or honey). Stir constantly while bringing to a boil over medium high heat. Once boiling, allow to boil for one minute. Remove from heat and stir in baking soda. Mixture will foam. Stir until well blended.
  • Pour over puff corn. Stir really well to coat. Bake at 250 for 45 minutes, stirring well every 15 minutes. Allow to cool and store in an airtight container.
  • If you eat it all before everyone gets home, just make sure you clean up the kitchen really good so they never knew it existed. Make double next time so you can share :)
