Steps:
- Combine cauliflower florets, baby carrots, mushrooms, and water in a bowl.
- Cover tightly and microwave for 5 minutes.
- Let stand for 3 minutes, covered.
- Drain completely, then pat vegetables dry.
- Combine remaining ingredients and mix thoroughly.
- Refrigerate overnight.

SEAFOOD SALAD WITH NO PASTA
Sometimes, I don't want noodles with my seafood. Sometimes I want different kinds of seafood. Obviously, you can adapt any recipe, but this combination works very well for our taste. Sometimes I'll use a 4 oz. can of tuna (drained) instead of the lobster if I'm broke.

Steps:
- Chop crab and lobster meat into small pieces. If shrimp are large, cut them into bite-sized pieces.
- Mix all ingredients in a large bowl.
- Refrigerate at least two hours before serving to allow flavours to blend.
- You can use imitation crab meat and precooked salad shrimp if you wish.

MEDITERRANEAN NO-PASTA SALAD
This is an awesome keto friendly and super tasty vegetarien salad thats great to bring to potlocks or have on a hot summer day as a meal or side dish. I'm a huge sucker for the olive bar at the grocery store. Throw in some summer sausage and artichokes if you want to make this more of an antipasto. It's a very versital salad and you can use or remove whatever you want! It's super easy to make and if you want to plump it up, you can add pasta of your choice. The below ingredients and amounts can be adjusted to your taste.

Steps:
- Chop up all the cucubmer either very thin or a little thicker, it's up to you. You could even dice little squares if you wanted to.
- Dice the onion small.
- Slice the cherry tomatoes in half.
- Chop up the cilantro fairly well. and throw in the olives and cheese. You may chop the olives as well if you prefer that.
- Mix all ingredients well in a bowl and add the Italian dressing to coat. Ready to serve!

PASTA SALAD (NO ITALIAN DRESSING)
Ok, I dislike Italian Dressing (a lot) so, my brother-in-law shared this recipe with me and I loved it so much, I kept it. Not sure where he got it from. I just love the dressing because it is a lot smoother tasting than Italian dressing from the supermarket. Also, this is great for picnics/lunches because it does not contain any mayo and you can leave the cheese out.

- Cook, drain, and rinse (with cold water) the pasta.
- Mix pasta, vegetables, and cheese in a large bowl.
- In a small bowl, mix oil, vinegar, sugar, and seasonings.
- Add oil/vinegar mixture to the pasta mixture until the pasta appears well-oiled. You may not need the entire amount however, save it. Many times, if you do not eat the pasta salad right away (or save leftovers in the fridge) you will want to add a little more oil mixture to the pasta - kind of freshens it up.
- Note: You can add whatever fresh vegetables you have on hand. Also works great with roasted vegetables. Also, short noodles work better than long ones - ie: rotini is better than spaghetti - everything gets mixed up a lot better.

- Bring a large pot of lightly salted water to a boil. Cook penne at a boil until tender yet firm to the bite, about 11 minutes. Drain and rinse under cold water. Transfer to a large bowl.
- Blend onion, cucumber, canola oil, vinegar, sugar, garlic powder, salt, mustard, parsley, and pepper in a food processor or blender until smooth, about 2 minutes.
- Pour sauce over pasta; toss to coat. Refrigerate 8 hours or overnight.
