VEGGIE-RIFIC NOODLE-FREE LASAGNA

Veggie-rific Noodle-Free Lasagna image

Steps:

  • Preheat oven to 425 degrees F.
  • Lay several paper towels next to the stove; as you cook the veggies, transfer them to the paper towels to drain excess moisture.
  • Bring a very large grill pan sprayed with nonstick spray to medium-high heat on the stove. Add zucchini, portabella mushroom, and eggplant, and cook until softened, about 2 minutes per side. Set aside.
  • In a large bowl, combine crushed tomatoes with garlic powder, onion powder, and Italian seasoning. Mix well and set aside.
  • In another large bowl, combine spinach, egg substitute, ricotta cheese, basil, salt, and nutmeg. Mix thoroughly and set aside.
  • Evenly coat the bottom of an 8-inch by 8-inch pan with about half of the seasoned crushed tomatoes. Evenly layer half of the sliced veggies over the tomatoes. Spread half of the spinach mixture into an even layer over the veggies. Top evenly with soy crumbles.
  • Evenly layer remaining veggies into the pan, placing them perpendicular to the first layer, followed by the remaining spinach mixture. Evenly cover with remaining seasoned crushed tomatoes. Evenly distribute mozzarella cheese and grated topping over the crushed tomatoes.
  • Bake in the oven until lasagna is hot and mozzarella cheese is golden brown, about 30 minutes.
  • Allow to cool slightly, cut into quarters, and enjoy!

Dash ground nutmeg
1 cup ground-beef-style soy crumbles, thawed from frozen
1/2 cup shredded part-skim mozzarella cheese
1 tablespoon reduced-fat Parmesan-style grated topping

1 (4 ounce) can mushrooms
8 ounces cottage cheese
1/4 cup dried onion flakes

1 package frozen spinach

"YOU'LL NEVER MISS THE NOODLES" LASAGNA

I found this recipe on a low carb site and modified it slightly to suit our tastes. We had it for dinner last night and it was AWESOME!! Very yummy and the flavor of all those fresh veggies blended beautifully with the sauce! DH went back for seconds, so this is definitely a keeper. Add a side salad and your meal is complete!

Steps:

  • Brown the meat and sausage in a large frying pan.
  • When meat is about half done, add the onion, bell pepper, and garlic and continue cooking until the onion is transparent.
  • Add the tomato sauce, paste, water and seasonings; mix well.
  • Cover and simmer for 20 minutes, stirring occasionally.
  • Beat the eggs and ricotta together; season to taste with salt and pepper.
  • Preheat oven to 325° and spray a 9x13-inch pan with olive oil cooking spray.
  • Spread 1/2 of the meat mixture in the bottom of the pan.
  • Top with sliced zucchini.
  • Spread the zucchini with the ricotta mixture and top with the spinach and mushroom slices.
  • Top that layer with with half of the Mozzarella and Parmesan cheeses.
  • Cover with the remaining meat mixture and top with the remaining cheeses.
  • Bake at 325° until the cheese is bubbly and beginning to get golden, about 35 to 45 minutes.

Bring up to a boil, and then cover the skillet, turn the heat down to simmer, and cook until it’s a rich, thick sauce, stirring occasionally, about 2 hours. After 1 hour 45 minutes, stir in the green bell peppers and cook uncovered the last 15 minutes, stirring frequently.
  • To assemble the casserole, spread the meat mixture into the bottom of a 2-quart casserole dish. Spread the cheese mixture on top, and then sprinkle the shredded mozzarella and grated Parmesan on the top.
  • Bake at 400F until the casserole is bubbling, about 20 minutes. To brown the top, broil a few minutes, watching closely so it doesn’t burn.
