Steps:

  • Heat oil in a large pot over medium heat. Add garlic and onions and saute 2 minutes.
  • Add carrots, celery, bay leaves, thyme, chicken and broth. Bring to a boil. Add noodles. Reduce heat to medium and simmer 10 minutes. Remove bay leaves and thyme sprigs. Season with salt and pepper to taste.

This is my "trademark" recipe--I make it every single week! It is so rich and flavorful I like it more than "traditional" chicken soup. Although the secret ingredient--sassafras--isn't essential, it deepens the flavor. Powdered sassafras leaves can be found in supermarkets in the spice section. It's also called "fil'e" or "gumbo fil'e." If your market has a "Cajun" or "Creole" section, you might be able to find it there too. It's a classic Cajun seasoning, but it's also good in just about everything.

No-Chicken Soup image

Steps:

  • Warm oil in a soup pot large enough to hold 10 cups over medium heat.
  • Saute onion until golden brown.
  • Add all other ingredients.
  • Simmer over low heat until reduced by about 1/4. (For me that usually takes about 2 hours). If the soup reduces too quickly before the vegetables are cooked, add a little water and continue cooking.
  • You may also put all the ingredients in a crock pot and cook the soup on low for about 6 hours and high for about 3 (very approximate times!).
  • Correct the seasoning--add sassafras and/or fresh black pepper if you like.
  • This soup is excellent served with cooked egg noodles or garlic-flavored bagel chips.

  • Combine everything in a large pot.
  • Bring to a boil, lower heat, and partially cover.
  • Cook slowly for 1-2 hours.

Chickenless Chicken Noodle Soup image

Steps:

  • Bring the water almost to a boil and add the cubes.
  • Dissolve cubes.
  • Once it has reached a boil pour in egg noodles.
  • Cook for 5 minutes and then add vegall, cream of soup, dill weed, bay leaf, salt, pepper, and celery salt.
  • Continue cooking for 5 minutes.
  • Serve with a nice grilled cheese sandwich.
  • PS Will thicken upon standing.

7 cups water
7 chicken bouillon cubes
1/2 can cream of chicken soup
8 ounces egg noodles (I use the wide ones)
1 can Veg-All
1/2 teaspoon dried dill weed

Steps:

  • Spiralize zucchini and give it a couple of chops to break the 'noodles' into shorter lengths. If you don't have a spiralizer use a vegetable peeler to cut thin strips. Set the zucchinis, carrot pulp, spinach and celery aside.
  • In a Vitamix or other blender, load in the walnuts, garlic, poultry seasoning, Aminos, black pepper, onion powder, and water. Spin it until it is a a well combined, creamy looking soup. This is the broth for the soup; taste and adjust the flavorings.
  • With the Vitamix or blender running on low, add the celery, carrot pulp, spinach. Spin it only until well combined.
  • Put the zucchini 'noodles' in the serving bowls and add the soup. Stir to combine.
  • Serve with your favorite crackers and Enjoy!
