A truly piquant pickle that will satisfy those of us who have a loose sweet tooth. I have been looking for a truly flavorful pickle recipe, not sweet, but not just spicy, either. Steps:
- Combine water, vinegar, salt, peppercorns, yellow and brown mustard seeds, sugar, and crushed red pepper flakes in a saucepan over medium heat. Cook until sugar and salt have dissolved, 5 to 7 minutes. Allow mixture to cool, about 30 minutes.
- Cut cucumbers into even spears and pack into a 1-liter, large-mouthed glass jar. Add onion slices, dill sprigs, and garlic. Pour cooled vinegar mixture over cucumbers in the jar to cover completely. Seal with a lid and refrigerate for 24 hours before serving.

SWEET AND HOT REFRIGERATOR PICKLES
Not too sweet and just spicy enough, these quick pickles will keep for weeks in the fridge. Outstanding with egg salad, cream cheese on toast, or just straight from the jar, in our house they're gone in a matter of days. Steps:
- Makes about 3 pints.
- In a large mixing bowl, toss together cucumbers, onion, and salt. Cover mixture with a clean, dry dishtowel, then cover surface with ice cubes (keeping the salted cucumbers very cold ensures crunchy pickles). Refrigerate for about 3 hours, until vegetables have released some liquid. Rinse well under cold running water to remove excess salt. Drain and set aside.
- In a large saucepan, combine vinegar, sugar, and spices. Bring to a boil, stirring to dissolve sugar. Add vegetables to pot and bring to just under a boil. Remove pan from heat. Using a slotted spoon, transfer vegetables to jars or other containers with tight-fitting lids. Cover vegetables with brine, cover containers, and refrigerate.
- Pickles keep, refrigerated, for several weeks.

These are wonderful sweet and sour pickle slices. Plan ahead The mixture must be refrigerated for 4 dyas before using and will keep up to 1 month in the refrigerator. The garlic is optional!

Steps:
- Place half of the cucumber in a large glass bowl then top with half of the onion, then place the remaining cucumber slices on top of the onions.
- Then place the remaining onion slices slices on top.
- Sprinkle the garlic slices (if using) over and around the pickles and onions.
- In a saucepan combine the vinegar with all remaining ingredients; stir well and bring to a boil, cook for 1 minute.
- Pour the mixture over the cucumber and onions; bring to room temperature and refrigerate for 4 days before using.

had these at a friend's house...sooo good...recipe is from her mother...cook time is chill time. these are called refrigerator pickles for a reason, they must be kept in the refrigerator.

Steps:
- Mix cucumbers, onions, bell peppers, and salt.
- Cover and store in refrigerator for 2 hours.
- Drain liquid off and set cucumber mix aside.
- In large pot, mix sugar, vinegar, and mustard (OR celery) seeds.
- Heat until sugar melts.
- Remove from heat.
- Mix in cucumber mixture.
- Put in jars, let cool, then refrigerate.
- *I was told this will last 2 weeks in an airtight Tupperware type bowl-- but I put them in pint sized canning jars and they sealed.*.
- ~I do keep them in the refrigerator as they are called "refrigerator pickles" and they will ruin if they were not kept cold.~.
- ***As for the mustard seed OR celery seed-- we prefer mustard, but everyone has their own taste.***.

SUPER SIMPLE NO-COOK SWEET-AND-SPICY PICKLES
This recipe is so simple you could make it in your sleep, and so good you will want to keep a jar in the refrigerator all of the time. I got the original recipe from "Southern Living, August 2004 by Ann Wilson, Bowdon, Georgia". Her recipe was simple, but I made it even easier.

- Pour contents of jar into a colander and rinse with cold Rinse jar and add sugar, garlic and Tobasco®.
- Put pickles back into the jar, secure lid then shake, spin and twirl a few times before placing the jar into the refrigerator.
- For good measure, agitate the jar every time you go into the refrigerator.
- The pickles will be ready in about an hour but of course, the longer they sit, the better they get.
- (Storage time is about 3 to 4 weeks).
