PASTA WITH TOMATO AND PEAS

Steps:
- Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes. Drain the pasta, reserving 2 cups of the pasta water.
- Meanwhile, heat the oil in a large nonstick frying pan over medium heat. Add the shallots, garlic, carrots, salt, and pepper. Cook until tender, about 8 minutes. Add the tomato paste and 1/2 cup of the hot pasta water. Stir to melt the tomato paste and create a sauce, adding more pasta water if necessary. Stir in the oregano, thyme, and parsley. Gently fold in the cooked pasta, peas, and the cheeses, adding more reserved pasta water if necessary. Transfer to a platter and serve immediately.

- Place the green beans in a pot, and mix in the lemon juice, onion, olive oil, tomatoes, tomato sauce, parsley, water, salt and pepper, and bay leaf. Cook 45 minutes over medium heat, stirring occasionally, until sauce is thickened. Remove bay leaf before serving.

PEAS IN TOMATO SAUCE (REVITHIA ME SALTSA DOMATA)
I found this wonderful recipe on greek-recipes.com but it started with dried chick peas. Not having the luxury of time, I ended up remaking the recipe with a slightly more convenient ingredients. This can be served either as a side-dish serving 4 or an entrée serving 2.

Steps:
- Remove peas from the freezer so that they can begin to thaw while the dish is simmering.
- Add olive oil and onions to a large skillet over medium heat. Cook 2 or 3 minutes until the onions soften a bit. Add the minced garlic and stir a minute.
- Add the tomatoes (canned and paste), sugar, oregano, basil, and water to the onions. Continue to cook another 5 minutes so that flavors begin to come together. Adjust seasonings as desired at this point. Add zucchini and cook 5 to 8 minutes. The zucchini should be cooked but still firm.
- Add the thawed peas and stir again until the peas are warm, about 2 or 3 minutes.
- Serve warm.

The simple mezze below combines yellow split peas that are cooked down to a velvety, polenta-like texture, seasoned with oregano, then topped with a cinnamon-touched tomato and onion sauce. Points 5.

Steps:
- Place split peas in a deep saucepan.
- Add cold water to cover peas by at least 2 inches.
- Bring to a boil over medium-high heat.
- Reduce heat to a simmer and cook gently 45 to 50 minutes, stirring occasionally with a wooden spoon, until peas are soft and almost dry.
- (Add 1/4 cup water, if needed, to keep peas from sticking.)
- When peas are soft, stir in oregano and 1 teaspoons oil.
- Season to taste with salt and pepper.
- Transfer to a wide, shallow dish.
- While split peas are cooking, make the sauce.
- Heat remaining oil in a medium non-stick skillet over medium-high heat.
- Sauté onion until golden, about 6 minutes.
- Stir in tomatoes, tomato paste, cinnamon, bay leaf and 1/4 cup water.
- Simmer until tomatoes break down, about 10 minutes.
- Remove bay leaf.
- Mix in vinegar and capers.
- Season to taste with salt and pepper.
- Spread sauce evenly over cooked peas.
- Set aside to cool to room temperature.
- Serve, or cover and refrigerate for up to 24 hours.
- Bring to room temperature before serving.

- Bring a pot of lightly-salted water to a boil; stir in the green beans and return to a boil. Reduce the heat to medium, and cook the green beans until just tender, about 8 minutes. Drain.
- Heat 2 tablespoons of olive oil in a large skillet over medium heat; cook and stir the onion, 1 clove of garlic, and parsley in the hot oil until the onion is translucent, about 5 minutes. Stir in the tomatoes, wine vinegar, and cumin; bring the mixture to a boil, reduce heat to medium-low, and simmer for 30 minutes to thicken the sauce. Transfer the sauce to a bowl.
- In a clean skillet, heat 1 tablespoon of olive oil over medium-low heat; cook and stir 1 clove of chopped garlic in the hot oil until fragrant beginning to brown, 2 to 3 minutes. Return the cooked green beans to the skillet; cook and stir to reheat the beans and coat them with oil. Pour the sauce over the beans and stir to coat. Serve hot.

This sauce adds a very nice flavor to mashed potatoes, and the combination goes very well along with steak. To reduce the amount of fat in the sauce I like to use evaporated milk. You can use cream instead, but I think the lower-fat-version is just as tasty!

- Warm the oil in a skillet over medium-high heat. Stir in the onion, and cook until nearly tender. Stir in the garlic, and cook for a few seconds, until fragrant. Pour in peas, and stir to thaw. Pour in the vegetable stock and evaporated milk. Turn heat to low, cover, and cook for 5 minutes. Once the peas have cooked, pour them into a blender and puree until smooth.
- Pour the pureed sauce back into the skillet, and season to taste with salt and pepper. Simmer over low heat until the sauce reaches desired consistency.

- defrost frozen peas under warm water completely. drain.
- combine sugar, ground cumin, garam masala, salt, cayenne, and tomato paste. slow add 2 TB water, mixing as you go.
- add cream slowly, mix. add lemon juice, cilantro, and green chile. mix again and set this cream sauce aside.
- put oil in large frying pan and set over medium high heat. when it's hot, add cumin seeds and mustard seeds. as soon as seeds begin to pop, add peas. Stir and fry peas for 30 seconds.
- add in cream sauce. cook on high heat for 1.5-2 minutes or until sauce has thickened, stirring gently as you do so.
