SHORTCUT NUTTER BUTTER BANANA PUDDING TRIFLE

Steps:
- Place 3 cups milk and vanilla in large bowl; add vanilla instant pudding mix. Beat with an electric mixer at medium speed 2 minutes or until thickened; let stand 5 minutes. Stir in sour cream.
- Fill a large bowl with ice. Place bowl in ice, and let stand, stirring occasionally, 30 minutes or until mixture is thoroughly chilled.
- Meanwhile, cut bananas into 1/4-inch slices. Break cookies into thirds.
- Spoon half of pudding mixture into a 3-qt. bowl or pitcher. Top with bananas and cookies. Spoon remaining pudding mixture over bananas and cookies. Top with whipped topping. Cover and chill 2 to 24 hours. Garnish, if desired.

Banana pudding is my absolute favorite! I buy it @ any restaurant, if it's served, and am mostly disappointed. (Although, Beau Rivage in Biloxi, Mississippi has a great version). - 1. For 15-20 minutes, constantly whisk together milk, eggs, splenda/sugar, and all purpose flour until thickened. Remove from heat, stir in butter and vanilla. Chill. Pudding shortcut: 1tsp vanilla, 3c milk, 2pk instant vanilla pudding. allow to set. stir in 8oz sour cream.
- 2. Spoon 1/2 chilled pudding mixture into 3qt trifle. Top w/ cookies and bananas. Spoon remaining pudding mixture on top. Cover w/ whipped cream in desired. Optional: crush several cookies into 1c crumbles and dust over trifle.
PEANUT BUTTER - BANANA PUDDING
A twist on the old-fashioned banana pudding, using chocolate wafers, instead of vanilla ones, and peanut butter. Prep time does not include chilling.

- Combine first 3 ingredients in a heavy saucepan; whisk in eggs and milk, and cook, whisking constantly, over low heat until thickened (about 25 minutes.) Remove from heat and stir in butter and vanilla. Set custard aside.
- Spread a 1/2 teaspoon of peanut butter between 2 chocolate wafers, forming a sandwich; repeat with remaining peanut butter and chocolate wafers.
- Place sandwich cookies in the bottom of a 3-quart glass bowl or trifle bowl; top with banana slices. Pour custard over bananas. Cover and chill 4 hours.
- Spread whipped topping evenly over the custard and sprinkle with peanuts before serving.

- Prepare a large glass bowl or a trifle bowl.
- In a large bowl beat the vanilla pudding and milk for 2 minutes; add in the condensed milk until smooth.
- Stir in vanilla, then fold in the Cool Whip topping.
- Layer wafers, sliced bananas and pudding mixture in the large glass bowl.
- Chill until serving.
BANANA TRIFLE
Very simple banana trifle that I've made several times now, my own recipe. No chocolate, no "extra" flavors (I mean you, toffee!). As given it doesn't make a huge amount, but it's very easy to scale it up for a crowd or down for a single serving. Best made the day before. The time given does not include time for the cake to bake. For the cake, feel free to use your favorite mix; it'll need about half, as written. The cake needs to be dry, to properly soak up the liquid. Either bake it and slice it the day before, or toast it (sliced) in the oven on low heat for about an hour. Or just use stale cake if you've got any lying around. You could probably make it with other fruit (raspberries? mangos?) but I haven't tried. If you want a slightly more complex tropical flavor, replace part of the yogurt with coconut milk/cream, or add toasted coconut with the cake.

- Slice the bananas and set them aside in a mixing bowl. Combine the butter and sugars in a measuring cup and heat in the microwave until soft.
- Beat the mixture until smooth, then heat 1-2 minutes more on high until it bubbles. (Longer will caramelize it, which can also be good.).
- Add the rum (watch for the alcohol to boil off) and mix thoroughly. Pour over the bananas and refrigerate until cool. (Overnight is good.).
- Bake the cake according to package directions. Pan doesn't matter.
- Slice the cake into 1" cubes. (This is easier to do if it's already slightly dry.).
- Mix the lemon juice into the yogurt, stirring thoroughly to get it nice and creamy.
- Cook the bananas in the microwave for a few minutes; they should be soft but not mushy. Pour off and reserve the cooking liquid.
- Assembly time! Layer cake, bananas, and yogurt into a nice glass casserole or bowl. I usually do 2 full sets of layers, with a third layer of cake on top. Pour the reserved cooking liquid on top and top with the remaining yogurt.
- If you've got an extra fresh banana lying around slice it and arrange it on top; sprinkle cinnamon or powdered nuts if you like. Serve chilled.

- Make sure to have all your layers prepared or ready before you start constructing your trifle. I like buying store bought cake, brownies, and using instant pudding to make it quick and easy!
- To prepare the peanut butter filling add cornstarch, egg yolks, and milk to a sauce pan on medium to high heat stirring constantly.
- Once boiling the mixture will start to thicken. Continue stirring until it’s thickened. (The consistency is like peanut butter)
