SALTED CARAMEL SUNDAE
Steps:
- Preheat the oven to 350 degrees F.
- Spread the peanuts on a sheet pan and roast for 7 minutes, until they become fragrant. Pour into a medium bowl, add the popcorn, and set aside. Line the sheet pan with parchment paper.
- Place the sugar and 1/4 cup water in a medium (10-inch) saute pan and mix with a fork until all the sugar is moistened. Cook over medium-high heat until the sugar dissolves--from this point on, don't stir the caramel, swirl the pan! (Don't worry if the mixture looks as though it's crystallizing.)
- Continue to cook for 5 to 10 minutes until it becomes a clear golden brown, swirling the pan constantly at the end. (Be careful, the caramel is very hot!) Off the heat, quickly add the corn syrup and vanilla (it will bubble up!) and swirl the pan to combine. Working quickly (the caramel will continue to cook in the pan), add the popcorn and nut mixture plus the kosher salt and toss with two large spoons until the popcorn and nuts are completely coated.
- Pour the mixture plus any extra caramel in the pan onto the prepared sheet pan and spread the mixture out in one layer, pulling it apart with two forks. Sprinkle with the fleur de sel and set aside to cool. When it's completely cooled, carefully break into large clusters with your hands.
- To serve, pour puddles of Chocolate Sauce into shallow bowls. For each serving, place 3 small scoops of gelato on the chocolate sauce, sprinkle with some of the caramelized popcorn, and add a dollop of the Sweetened Whipped Cream in the middle. Serve immediately.
- Place the chocolate, cream, corn syrup, and coffee in a bowl set over a pan of simmering water. Be sure the water doesn't touch the bottom of the bowl. Heat the mixture, stirring occasionally, until the chocolate melts and the mixture is smooth. Serve warm.
- Pour the cream into the bowl of an electric mixer fitted with the whisk attachment. Add the sugar and vanilla and beat on high speed until the cream forms soft peaks.

CARAMEL PECAN SUNDAES
Steps:
- For the caramel, mix 1/3 cup water and the sugar in a medium heavy-bottomed saucepan. Cook, without stirring, over low heat for 5 to 10 minutes, until the sugar dissolves. Increase the heat to medium and boil uncovered until the sugar turns a warm chestnut brown (about 350 degrees on a candy thermometer), 5 to 7 minutes, gently swirling the pan to stir the mixture. Be careful; the mixture is extremely hot! Watch the mixture constantly at the end, as it will go from caramel to burnt very quickly. Turn off the heat. Stand back to avoid splattering and slowly add the cream and vanilla. The cream will bubble violently and the caramel will solidify; don't worry. Simmer over low heat, stirring constantly, until the caramel dissolves and the sauce is smooth, about 2 minutes. Allow to cool to room temperature, at least 4 hours. It will thicken as it sits. To assemble the sundaes, place one scoop of vanilla ice cream and one scoop of butter pecan ice cream in each dish and sprinkle with toasted pecans. Drizzle with caramel sauce and serve extra sauce on the side.

- 1. Preheat oven to 350°F. Grease a 13x9-inch baking pan and set aside.
- 2. In a large mixing bowl, cream butter, then add in flour, sugar, and salt until mixture is crumbly. Press 2 cups of the crumb mixture onto the bottom of the pan, reserving the rest. Bake for 10-12 minutes, or until edges are golden brown. Leave oven on.
- 3. In a small heavy-duty saucepan, combine 1 cup of chocolate chips and sweetened condensed milk. Over low heat, melt chocolate chips and blend into milk, stirring until smooth. Stir in vanilla extract, then spread evenly over the hot crust.
- 4. Stir the nuts and remaining chocolate chips into the reserved crumb mixture and sprinkle over the chocolate/milk mixture. Return pan to oven and bake for 25-30 minutes or just until set. Remove and allow to cool on a rack. Drizzle caramel topping evenly over top.
CLASSIC HOT FUDGE SUNDAE

- Preheat the oven to 375 degrees F.
- Mix the butter, brown sugar and white sugar until combined. Add the eggs and vanilla and mix together.
- In a separate bowl, stir together the flour, salt, baking soda and instant coffee. Add to the wet ingredients in batches, mixing gently after each addition. Gently mix in the chocolate chips or chunks.
- Thoroughly grease and flour a quarter sheet pan or a 9- by 13-inch baking pan. Spread the cookie dough into the pan, spreading out the surface.
- Bake for 15 to 18 minutes until done (longer if needed to make sure it's set. (If doubling the recipe then increase the cooking time to 20 to 22 minutes.)
- To serve, warm the hot fudge and caramel sauces. Place a square of cookie on a plate. Top with a scoop of ice cream, followed by drizzles of both hot fudge and caramel sauces. Finish with whipped cream and a cherry.

- To Make the Sauce: Melt the chocolate with the butter (you can do this in the mircowave) until there are no lumps. Remember to stir this while heating.
- Once melted, leave to cool for 5 minutes and then swirl in the cream. If mixture curdles- add more cream. Sift in the icing sugar and stir.
- When ready to use- put this mixture into a pan and add the syrup. Heat this and stir until the sauce is pourable and add to the sundae (below).
- Sundae: Put the ingredients into large wine glasses or sundae bowls, varying different layers in. Fill to the top.
- Pour the warm sauce over the top and spinkle afew biscuit crumbs on top. Serve warm.
CHOC & NUT SUNDAE CAKE

- Heat oven to 190C/fan 170C/gas 5. Butter a 23cm spring-sided cake tin, then line the bottom with baking parchment and butter that as well. Tip 1 tsp cocoa powder into the tin, then tip and turn it so that the bottom and sides get covered in a fine layer. Tip out any cocoa that doesn't stick.
- Put the eggs and sugar into a large bowl and whisk with an electric hand beater for about 5 mins until very thick and pale. Pour the butter in around the edge of the bowl, then sieve in the flour and 4 tbsp cocoa powder. Fold in with a large metal spoon, cutting rather than mixing so that you preserve the bubbles. Pour into the tin and bake for 20 mins or until risen and springy. Cool for 5 mins in the tin, then turn onto a wire rack to cool completely.
- Get ahead with the chocolate sauce. Put all the ingredients into a microwave-proof bowl and cook on High for 1 min or until the chocolate has melted. Stir briefly until smooth, then cover and set aside. Keep for up to 3 days or freeze for up to 1 month.
- Once the cake is cold, take the ice cream out of the freezer to soften just a little. Cut the cake in half across the middle (the easiest way is to use a bread knife) and put the bottom onto a serving plate. Scoop one tub of ice cream onto the base in an even layer and top with half the crumbled Flake and half the hazelnuts. Top with the other half of cake, then cover that with scoops from the second tub of ice cream and the chocolate and nuts. Serve straight away with the sauce, or freeze for up to 1 month (see Know-how, below).
- If you've frozen the sauce, take it out to defrost at room temperature a few hrs before serving. Transfer the cake to the fridge 1 hr before you want to serve it. If your chocolate sauce is still a little set, warm it for a few secs in the microwave on Low. Drizzle some of the chocolate sauce over the cake and serve with more in a little jug for pouring.
