FLAT APPLE AND VANILLA TART
This tart is so easy to make and looks great when it comes out of the oven. Serve it warm with vanilla ice cream or creme fraiche. From a supplement that came with Good Food Magazine.

Steps:
- Preheat oven to 220C/425°F.
- Roll out the pastry and trim to a round about 35cm (14 inches) across. Transfer to a baking sheet lined with parchment paper.
- Peel, core and thinly slice the apples, then toss in the lemon juice and vanilla.
- Spread over the pastry to within 2cm (3/4 inch) of the edge. Curl up the edges slightly to stop the juices running off.
- Dot with butter and sprinkle with caster sugar.
- Bake 15-20 minutes until the apples are tender and the pastry crisp.
- Warm the jam and brush over the apples and pastry edge.
- Serve warm with vanilla ice cream or creme fraiche.

- Pastry: Mix pastry ingredients very well.
- Make 18 small balls and pat into (bottom only) of a muffin pan.
- Filling: Mix filling ingredients well with an electric mixer.
- Put one tablespoonful on each crust in muffin pans.
- Sprinkle pecans on top of each tart.
- Bake in preheated oven at 350° for 25 minutes.

- Preheat oven to 375 degrees F (190 degrees C). Line 2 baking sheets with parchment paper.
- Sift flour, 1 tablespoon sugar, and salt together into a bowl. Cut in chilled butter with a pastry blender or 2 knives until mixture resembles small peas. Add vanilla. Mix in cold water, 1 tablespoon at a time, until dough comes together and forms a ball.
- Divide dough into 2 pieces and wrap with plastic wrap; chill until firm, at least 1 hour.
- Beat softened butter, 1/4 cup sugar, and cinnamon together in a bowl to make filling.
- Roll out dough on a lightly floured work surface to 1/2-inch thickness. Cut dough into rectangles with a knife. Drop 1 tablespoon of filling onto half of the rectangles. Cover with remaining rectangles. Press edges with a fork to seal. Poke a few holes in the top of each pastry with a toothpick.
- Arrange pastries on the lined baking sheets.
- Bake in the preheated oven until golden brown, 25 to 30 minutes. Cool pastries on a wire rack, about 15 minutes.
