NW TROUT WITH MUSHROOMS (ZWTIII)

A nice way to prepare trout. My Dad made this often, sometimes alternating with almond slivers instead of the mushrooms for Brook Trout Almondine. ;)

Steps:

  • In a large skillet, saute mushrooms in 2 tablespoons butter until tender.
  • Stir in parsley.
  • Remove mushrooms to a serving platter; keep warm.
  • Combine flour and salt in a shallow dish; coat fillets with flour mixture on both sides.
  • Add 2 tablespoons butter to the skillet. Cook trout over medium heat for 8-10 minutes on each side or until fish flakes easily with a fork; arrange over mushrooms.
  • For sauce, melt remaining butter in a small saucepan.
  • Gradually stir in cream and lemon juice.
  • Bring to a boil for 3-4 minutes or until slightly thickened, stirring constantly. Serve over trout and mushrooms.

2 tablespoons fresh parsley, minced
1/3 cup all-purpose flour
1/4 teaspoon salt
4 (6 ounce) trout fillets
1/3 cup heavy whipping cream
1/2 teaspoon lemon juice

Steps:

  • For the spice mix: Combine cayenne, garlic powder, onion powder, smoked paprika, black pepper, salt and sugar in a bowl. (This will keep for 3 to 4 months in an airtight container.)
  • For the slaw: Combine the cabbage and Pickled Celery thoroughly.
  • For the scallion mayo: Add soy milk, lemon juice, mustard, salt, vinegar, scallions and garlic to a blender and blend until a homogenous color. With the blender running, slowly add the oil to emulsify. If the mayo becomes too thick, add a little ice water to thin it out.
  • For the sandwich: Heat oil in a deep-fryer to 350 degrees F.
  • Heat cornstarch in 4 quarts water in a saucepan until clear.
  • Coat mushrooms in cornstarch slurry, then fry until the exterior is golden brown. While the mushroom is still very hot from the fryer, coat in 1 tablespoon of the spice mixture, and a little extra salt. Coat both sides of the focaccia in the scallion mayo, then place the mushroom on top, and 1 cup slaw on top of that.
  • Heat up the sugar, vinegar, mustard seeds, salt, turmeric, celery seeds and coriander seeds in a pot until it reaches a boil. Pour over the celery and onion in a large bowl. Let sit until cool.

1 bunch scallions
1 garlic clove
2 cups canola or any neutral oil
Oil, for frying
1 cup cornstarch
1 bunch beech or maitake mushrooms, kept intact as a bunch
Salt, for sprinkling
Focaccia bread, toasted
4 cups granulated sugar
4 cups distilled white vinegar
3 tablespoons mustard seeds
3 tablespoons salt
2 tablespoons turmeric
1 teaspoon celery seeds
1 teaspoon coriander seeds
2 heads celery, cut into 1/2-inch-thick slices
1 onion, julienned

FRIED MUSHROOMS

At my house, we don't like those fried mushrooms that are black and slimy where the breading slides easily off. This recipe is just a very crisp breading on a fresh mushroom. They'll 'pop' when you cut into them they are so fresh. Panko breadcrumbs are a polished bread crumb that you can find in an Asian market or the International section of your favorite food store and they make just a wonderful crunchier coating, too.

Steps:

  • Mix flour, cornstarch, baking powder and salt in a bowl.
  • Add water to make a batter.
  • Dip clean mushroom into batter letting excess batter drip off.
  • I find it easier to stick a toothpick into the mushroom to dip it.
  • After dipping into batter roll in Panko breadcrumbs to coat.
  • Deep fry in oil until golden.
  • We like to serve with cocktail sauce.

10 ounces fresh white mushrooms, wiped clean
1 cup flour
1/2 cup cornstarch
