OAT POTATO SANDWICH BREAD

This flavorful bread is a slightly modified Gold Medal recipe. Preparation time is approximate. I like the bit of a "bite" that the lemon pepper adds, but feel free to substitute any herbs you like. Double amounts if using fresh herbs. I usually bake this as rolls or baguettes for sandwiches.

Steps:

  • Place ingredients in your machine as directed by the manufacturer.
  • Set to basic/white cycle with light or medium crust.
  • Alternatively, set on dough cycle. Remove, shape, and let rise in loaf pan or free-form. Bake for app. 40 minute at 375 deg.

1 1/2 cups warm water
1 tablespoon vegetable oil
2 tablespoons honey
3 cups bread flour
1/2 cup potato flakes
3/4 cup oatmeal (old-fashioned or quick-cooking)
1/2 teaspoon lemon pepper
1/2 teaspoon thyme or 1/2 teaspoon herbes de provence
1 1/2 teaspoons salt
2 teaspoons active dry yeast

Sourdough Oatmeal Potato Bread image

Steps:

  • Place ingredients in bread machine pan in the order that they are listed.
  • Select dough cycle and press start.
  • Turn dough out on lightly floured surface and shape into desired loaf.
  • Place in greased loaf pan and let rise, covered, until 1 to 2 inches above edges of pan.
  • Be patient, this can take several hours, depending upon how active your sourdough culture is.
  • Uncover and bake at 350 degrees F for about 30 minutes, or until done.
  • Immediately turn out of pan and cool on wire rack.
  • Brush top crust with butter for a soft crust, if desired.
  • NOTE: You can use part whole wheat flour (up to 1 1/2 cups) in place of all white flour.
  • I recently made this and used only 1/2 cup of whole wheat flour.
  • It made a very nice, light wheat bread.

Steps:

  • Cook potato in enough water to cover.
  • Drain, retaining the water.
  • Measure 140 ml of potato water into a small bowl and set aside to cool to lukewarm. Don't discard the rest of the potato water - to this add the oats to soften.
  • Mash the potato well with a little of the milk.
  • When the potato water in the small bowl has cooled to lukewarm, add the yeast. Set this aside until it has a good frothy "head".
  • Mix remainder of milk and oil together.
  • Sift flour and salt into large bowl and make a well in centre.
  • Add the milk and oil, the mashed potato, frothy yeast, and the softened oats.
  • Mix well and knead until smooth and elastic - more flour may be needed but try to keep the dough as soft as possible.
  • Set aside to rise until double in size.
  • Knock back and knead very lightly.
  • Allow to rise a further 30 minutes and then divide into three and form into cob loaves.
  • Glaze with beaten egg and sprinkle with your choice of topping. I use either sesame seeds, poppy seeds or oats.
  • Bake 220 celsius for about 40 minutes.

  • In a large mixing bowl, combine the hot water and oats. Stir to combine and let cool to lukewarm.
  • Add the remaining ingredients and stir until combined. The dough may appear slightly dry at first. Knead by hand, stand mixer, or bread machine on the dough cycle until smooth and elastic. When sufficiently kneaded, windows will be visible in dough when it is stretched apart. (If using bread machine, skip ahead to step 4.)
  • Place the dough in a clean, lightly oiled bowl and cover with a clean, damp tea towel. Place in a warm place to rise until doubled in bulk, about 1 hour. (Try an oven that is slightly warmed and then turned off.)
  • When the dough is sufficiently risen, turn out onto the counter to shape. First stretch the dough so that it is as long as the long side of your loaf pan. Tuck the corners in then start rolling up into a log. (Shoulders in, head down.). Pinch all the seams shut. Place into a lightly oiled loaf pan with the seam side down. Cover with. greased plastic wrap and set in a warm place to rise, until the loaf is 2 inches over the top of the pan, about 45 minutes to 1 hour. Towards the end of the rising time, preheat your oven to 350 degrees.
