Banana Oatmeal Chocolate Chip Bars image

Steps:

  • Preheat oven to 350°F Butter and flour 15x10x1-inch baking sheet. Blend first 4 ingredients in medium bowl. Beat butter in large bowl until fluffy. Add both sugars and beat until well blended. Add eggs 1 at a time, beating well after each addition. Beat in bananas, then vanilla. Stir in flour mixture, then chocolate and pecans.
  • Spread batter in prepared pan. Bake until tester inserted into center comes out clean and top is golden, about 45 minutes. Cool in pan on rack. Cut into 3x2-inch bars and serve.

1 cup quick-cooking oats
1 tablespoon baking powder
3/4 teaspoon salt
1 cup unsalted butter, room temperature
1 cup sugar
1 cup packed golden brown sugar
2 large eggs
3 large mashed ripe bananas
2 teaspoons vanilla extract
1 (11 1/2 ounce) bag semi-sweet chocolate chips
1 cup pecans, toasted, chopped (optional)

Great recipe perfect for those 'keep-in-the-freezer' overrripe bananas, I cut mine to muesli-bar sized bars, but equally this would make a great slice (ice with melted chocolate if feeling naughty!)

Steps:

  • Set your oven to 180°C (= 355 °F). Grease an 8" suqare baking pan.
  • Cream brown sugar and butter.
  • Mix in eggs, vanilla and cinnamon.
  • Mix in oats, flour, banana and chocolate chips.
  • Pour mix into baking pan. Bake 35 minutes.
  • Cool in pan 5 minutes and turn onto a baking rack to cool 15 further minutes.
  • Cut to required size and shape.

  • Preheat oven to 350°F (177°C). Line a 9-inch square baking pan with parchment paper with enough overhang on the sides to easily remove the bars from the pan. Set aside.
  • In a large bowl or in the bowl of your stand mixer, mash the bananas. On medium speed, beat or whisk in the remaining ingredients in the order listed. Batter will be a little thick, but still pourable.
  • Pour/spoon the mixture evenly into the prepared pan and bake for 25-28 minutes or until the center is set (it will still look relatively soft!).
  • Remove from the oven and cool in the pan at room temperature for 30-60 minutes. After that, place the pan in the refrigerator for 1 hour until chilled. The bars are difficult to cut if they haven’t been chilled.
