THE BEST OATMEAL RAISIN COOKIES

Do you like chewy cookies? Or do you prefer cakey ones? Our oatmeal-raisin cookies can be both! For a chewy cookie, bake them right away. For a cakey cookie, let the dough rest in the refrigerator for at least 3 hours (or overnight works even better) to allow the oatmeal to hydrate. Then bake for a puffy cookie. We used dark brown sugar for added flavor and moisture but our secret ingredient is honey. When baked right away, the honey causes the cookie to spread, keeping it soft and moist. When you let the dough rest, the oatmeal and flour absorb the honey for that classic cakey texture.

  • Arrange an oven rack in the center of the oven and preheat to 350 degrees F. Line a rimmed baking sheet with parchment paper.
  • Whisk together the flour, salt, baking soda and cinnamon in a small bowl until combined. Beat the brown sugar and butter in a large bowl with an electric mixer on medium-high speed until light and fluffy, about 3 minutes. Add the honey, vanilla, egg and 1 tablespoon warm water and beat on high speed until creamy, scraping the sides and bottom of the bowl, about 3 minutes more. Add the dry ingredients and mix on low speed, scraping the bowl as needed, until completely combined. Add the oats and beat on low speed until combined. Fold in the raisins until evenly distributed. Arrange twelve 1-ounce scoops (2-tablespoon portions) of cookie dough on the prepared baking sheet, leaving about 2 inches between each. Bake until the cookies are lightly golden around the edges, 15 to 20 minutes. Cool on the sheet for 10 minutes, and then transfer to a wire rack to cool completely. Let the baking sheet cool, and then repeat with the remaining cookie dough.

  • Position the racks in the top and lower thirds of the oven and preheat to 350 degrees F. Line 2 baking sheets with parchment. Whisk together the flour, baking soda, cinnamon, salt and allspice in a large bowl.
  • Beat the butter, brown sugar and granulated sugar with an electric mixer on medium-high speed in a large bowl until light and fluffy, scraping down the sides of the bowl occasionally. Beat in the eggs 1 at time until blended, then beat in the vanilla.
  • Reduce the speed to low and beat in the flour mixture in 3 additions until smooth. Stir in the oats, raisins and walnuts with a rubber spatula. Drop heaping tablespoons of the dough onto the prepared sheets about 2 inches apart.

  • In a small bowl, combine the eggs, raisins, and vanilla. Cover and chill for 1 hour.
  • Preheat oven to 350 degrees F (175 degrees C).

  • Preheat the oven to 375 degrees F. Spread the walnuts on a rimmed baking sheet and toast, stirring occasionally, until golden and fragrant, about 8 minutes. Spread the coconut on another rimmed baking sheet and toast, stirring occasionally, until golden brown, about 5 minutes. Let the nuts and coconut cool.   • Preheat the oven to 350 degrees with racks in the upper and lower thirds. Line two large rimmed baking sheets with parchment paper.
  • For the cookies: Toss the raisins in the warm rum or water and let soak at least 10 minutes then drain.
  • Whisk the flour, baking soda, baking powder, cinnamon, allspice and salt together in a medium bowl.
  • Beat the butter, brown sugar and granulated sugar together in a large bowl with an electric mixer until light and fluffy. Beat in the eggs and then the vanilla. Add the flour mixture and beat until just incorporated. Stir in the oats, walnuts and the drained raisins.

  • Preheat oven to 350 degrees F. (or 325 convection oven). Line 3 cookies sheets with parchment paper.
  • Mix all dry ingredients.
  • Wisk together wet ingredients.
  • Fold in dry to wet and stir until moist. If batter is too dry add a little more applesauce.
  • Use small ice cream scoop to make cookies.
  • Bake 15 minutes.
  • Transfer to baking rack and cool.
  • I throw them into a ziploc bag and just grab 2 out of the freezer whenever the mood hits me. I use them for the kids lunches too and they love them!
  • VARIATION: I basically make the same recipe but with dairy free chocolate chips instead of walnuts and omit molasses and maple syrup. We live on those! I love stocking up the freezer on Sundays. :).

Steps:

  • Preheat oven to 350°F.
  • Place raisins into a small saucepan, add the whiskey or water and bring to the boil over medium high heat, stirring constantly. Off the heat, cover and set aside to steep.
  • In a large bowl, use a wooden spoon to cream together the shortening, sugars, eggs, and vanilla.
  • In another bowl, combine the flour, cinnamon, baking soda, and salt with a wire whisk.
  • Gradually add the dry ingredients to the shortening mixture, mixing with a wooden spoon.
  • Stir in the oats, then blend in the raisins and the walnuts; mix well.
  • Use a cookie scoop or drop by heaping teaspoonfuls 2-inches apart on an ungreased cookie sheet.
  • Place some granulated sugar in a small bowl. Moisten the bottom of a small glass in water and dip into sugar, then press the glass gently onto the top of each cookie to slightly flatten.
  • Bake in preheated 350F oven for 10 to 12 minutes or until lightly golden brown around the edges and centers are set--do NOT over bake.
  • Let cookies cool 1 minute on cookie sheet, then use a spatula to carefully remove warm cookies to wire rack to completely cool. DO NOT leave cookies on cookie sheet longer than a minute or two, or they will become stuck.

Steps:

  • Preheat oven to 350 degrees, line pans with oven safe wax paper or foil.
  • In 1 bowl, mix Flour, Baking Soda, Baking Powder, Cinnamon, and Salt.

RAISIN-DATE-OATMEAL COOKIES

This is something I came up with as a teenager (a LONG time ago lol). None of the oatmeal cookie recipes I tried gave me the result i wanted so I played around with them and came up with this one. The yield depends on how large you make the cookies, I used to make big ones so they would be chewier in the middle. Using shortening also makes them chewier. Sometimes I use half shortening and half butter. I also used to double this recipe because my family of four would GOBBLE them up. A double recipe might last for a few days at least lol.
