Taken from my mom's treasury of recipes. You can substitute craisins instead of the raisins - they taste wonderful too!

- Combine first eight ingredients in a bowl and mix well. In a separate bowl cream together the remaining four ingredients and mix with dry mix. Drop by teasoonfuls on cookie sheet and bake at 325 degrees for 12-15 minutes.
OATMEAL MOLASSES DROP COOKIES
I *love* these cookies! They are chewy, chunky, spicy, and delicious! The recipe originally came from Betty Crocker's Cooky Book and were listed as "The Best Cooky of 1900-1910". For a change, try substituting cut-up dates or other dried fruits for the raisins. NOTE: If you replace the shortening with butter as many reviewers have done, you will probably get a crispier vs. chewy cookie.

- Preheat oven to 400°F.
- Beat shortening, sugar, eggs, and molasses thoroughly.
- Stir dry ingredients (flour-cinnamon) together and blend into wet ingredients.
- Stir in oats, raisins and chocolate chips.
- Drop dough by rounded teaspoonfuls about 2 inches apart on a lightly greased baking sheet.
- Bake 8-10 minutes or until lightly browned.
- Note: When I used a 1 1/2-inch wide cookie scoop, I got 3 1/2 dozen cookies.

90 yr. old grandpa is coming for a visit. Since cookies are a part of his daily diet, I'm going to attempt to make him healthier versions. I looked through a dozen recipes on this site for molasses cookies and then came up with my own that fit what ingredients I had while still maintaining a healthier approach to cookies.

- Dissolve baking powder and baking soda in brewed tea, set aside.
- In a medium bowl, whisk together molasses, margarine, applesauce, maple syrup, peanut butter, egg white, and tea mixture until smooth.
- In a large bowl mix the rest of the dry ingredients.
- Add wet mixture to dry and stir until all blended.
- Drop teaspoons full onto greased cookie sheet and press down slightly with greased fork.
- Bake in preheated 350 degree oven for 10 minutes.

WWII OATMEAL MOLASSES COOKIES
This was my Grandmother's recipe from the 1940's. These cookies use molasses in place of brown sugar, which was one of the items rationed during the war (and harder to get than white sugar, they tell me). To me they're better than regular oatmeal cookies!

- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, stir together the flour, oatmeal, baking soda, baking powder, and salt.
- In another large bowl, beat the sugar with the shortening until smooth and creamy; mix in beaten eggs, molasses, and vanilla. Gradually mix in the dry ingredients. Stir in walnuts and raisins. Drop by teaspoonfuls onto ungreased baking sheets.

- Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper.
- In a large bowl, whisk together the oats, flour, baking powder, baking soda, cinnamon and salt.
- In a stand mixer, mix the sugar and coconut oil until combined. Add the molasses and eggs and mix until combined. Add the dry ingredients and mix until just combined. Fold in the raisins and walnuts.
- Using a 2-tablespoon or 1-ounce scoop, portion the dough onto the baking sheets, 1/2 to 1 inch apart. If you like chewier cookies, leave the dough as is. If you like crispier cookies, press down with a spoon to flatten. Bake until the edges are brown, about 15 minutes. Cool before serving.

- Preheat the oven to 400°F.
- First, mix the following together thoroughly in a blender: shortening, eggs, sugar and molasses.
- ** I find its easier to measure the molasses when hot, so I stick the bottle in the microwave for a few seconds, and heat up my metal measuring spoon on the stove (careful).
- Second, in a separate bowl, sift together the following: flour, soda, salt and cinnammon.
- After these are sifted, slowly add them to the mixer with the ingredients from the first step.
- Mix until fairly smooth, no lumps.
- Fold in the oats and raisins.
- This is pretty tough on the mixer, so unless you have a good one, you may want to do this by hand.
- To bake, drop rounded teaspoonfuls (or whatever size cookies you want) on a lightly greased baking sheet, approx 2" apart.
- I like to press the center of the cookie down a bit, so it cooks evenly.
- Cook for approximately 8 minutes.
- Notes: The cookies should be very soft, and even look un-cooked when you take them out of the oven.
- -Don't worry, let them cool, and you'll be rewarded with an amazing, chewy, tasty cookie.
- -Of course, if you prefer hard cookies, cook approx 2 minutes longer, but I recommend the chewy version.
